No hair nets. Wearing the same rubber gloves all day to handle food are also used to handle money and whatever else. Vendors talking over large pots of food spraying it with saliva and mucus droplets... Probably just scratching the surface. If you don't feel very well after visiting one of these places thinking it must have been something you ate somewhere... Nice festive atmosphere though.
