First, you have to find a perfectly round egg. Once you do, make sure it wasn't pitched in the major leagues.

I've seen so many of these videos on poaching eggs and this one not only explains about separating the loose white from the rest of the albumen, but also why to add salt and vinegar and how to get the white to encase the egg. Great video!

Yes. Heston Blumenthal had already mentioned straining the white, but nothing about either the vinegar or the salt. That was really very useful.

Great tutorial thanks. We also bring them up to room temp by putting eggs (in shell) into hot tap water for 5 mins. Would be nice to see how you would poach say- a dozen at once.

The real question is why are you refrigerating your farm fresh eggs? If the eggs arent washed, they dont need to go in the fridge. Look up: egg bloom

Good research! Consider the likelihood of getting farm fresh eggs and yet having to discard the albumin which has thinned out and which is protein. Its like over kill. For fried eggs I blend the albumin with a fork without separating the yolk. Not possible to get it perfectly without breaking the yolk, the end result gives a lace like and picture perfect sunny side up fried egg without sticking to the pan.

I'll try this version. Lately I've learned a great way by putting the uncracked eggs into a pot off boiling water for 12 seconds and then cracking them into a bowl and poaching them in the water. No need to add vinegar. They come out perfect.

I have tried to poach an egg so many times in the traditional way and I just cannot get it right. I finally bought one of those m/w egg poachers and it works pretty well. I am going to try this method though because I would like to be able to make it the real way.
