That's why so many Asian countries (West, South, South East, etc) generally have spicy food - historically poor spice availability. The best way to cover up bland food is to make it spicy!

@@kaldo_kaldo @Nick Miller that's a big misconception .. If you've had authentic Asian food you would know that even if the food is spicy it is well balanced with other flavours.. Which is why most Asian meals require many ingredients and not just a heap of chilli. Asian food found abroad (particularly instant meals founds in supermarkets) are not a good representation of the actual cuisine. The best thing to do is try to replicate a meal at home and reduce the heat to your taste and hopefully you won't find it too overpowering and will taste the other flavours better.

@@rsarah4755 I lived in Taiwan for a year and have been to the Singapore, Malaysia and Vietnam. You're welcome to tell all of the restaurants I went to and the people who cooked for me that their food isn't authentic, but I sure won't. There are plenty of modern dishes that are pretty good, don't get me wrong, but a large majority do have chilis (usually the bird's eye chili which has a really astringent taste rather than a good one) or some other very heavy flavoring like sesame oil. On the other hand, the typical home meal is just rice with some fish or meat without all of the pizazz. You might get some soy sauce, hot chili oil, vinegar or some things on the side. Contrary to what you said, Chinese food in the US does NOT load the food with chili, they flavor it with other things. Also, I'm a weird person who likes eating ultra spicy food, I just don't like chilis with bad flavor, like the bird's eye. I'm not being overwhelmed by the spiciness, but instead I'm overwhelmed by the bad taste of those horrible chilis that are so common.

@@kaldo_kaldo Lucky for you, you live in the US which is one major gastronomical hotspot. UK on the other hand.. Not so much.. We take bland food to a whole new level (case in point - bacon buttys) Having lived in India, I know for a fact that spice doesn't equal chilli.. Onions give it a sweetness, tomatoes a tang, chilli for heat, mustard for that earthy flavour.. There's a lot that goes into it..and when it comes to East Asian Cuisines you've got dimsums, ramen, braised meat, pickled vegetables, pad thai, nasi goreng. . And so many brilliant options that are just bursting with flavours compared to a fish like fish and chips or scones and clotted cream Anyway my point is, adding chilli to salvage a bland dish is like pouring sugar onto a slice of bread and calling it dessert.. It may work for some but it's not what Asians do!

I'm a million years late to this video, but I just have to say the most impressive thing to me was Ben's ability to put aside his personal preferences to recognise a good dish when he tasted in. I've seen a bunch of professional chefs on TV denigrate food because it included an ingredient or spice that wasn't to their personal taste, so it's mad props to Ebbers from me for being the better man.

I actually really like this format of battle - it feels more like it has more of a "challenge" aspect to it. With Ben's little inputs and questions too, and the "on the move" camera shooting style it really combines for an overall cooking show effect. At least in my opinion.
