Those are beautiful Vietnamese spring rolls ❤ ive only had them served with the hoison sauce and decorated with chopped peanuts Ive never had them with the peanut butter sauce, but it looks good too! Thank you 😄

Hi from FT.MYERS, SWFL, USA. I love your video. But, I do have a question that no can seen to answer. Cooking with SODA (Coke, Pepsi, Spirit, etc.). I can see seltzer for the aeration but when soda is considered toxic to drink & so bad for teeth what is it about Soda that makes a recipe. Does all the badness cook off??? Thank you…..

Hello, we are using coconut soda in this recipe. We just like this recipe with this specific soda. At the end of the day when you eat or drink anything it comes with risk. We know how difficult it is to lookout and eliminate everything bad or make the greatest health selections. Our motto is everything in moderation should be ok. True there are a lot of recipes that do use some type of soda in them, like cola or sprite but if it's only one can for a whole recipe, I don't think it's that terrible for one to consume, but coconut water or coconut juice is a great substitute 😊

Just so you know, seltzer water is basically carbonated water. Coconut is just a flavoring. In this recipe, it is just used as a flavor enhancer. During the heating process all the carbon dioxide burns off. You can use plain water if you want. I don't want my sauce to be extra sweet so I use plain water to thin down the hoison and peanut butter mixture. I also don't add the extra sugar. Some people like a sweeter taste and some don't. If you have high blood sugar problems (or diabetic), try this recipe without the coco soda and added sugar. Any cooking process using flavor sodas will eliminate ALL carbon dioxide and you're left with water, high fructose, other sugars and artificial flavoring additives. None of those ingredients "cook away." If you're looking for a healthier alternative, then I recommend not using any soda for this recipe. Just use water and regular sugar. Some people even use coconut milk to enhance the flavor, if you really want that added coconut flavor to your sauce.

I think you're just wasting a good beer if you're using it to just boil the pork. But the reasons why your mom and some people use beer or Chinese cooking wine when they boil pork belly are: 1. Get a better cleaner plain pork belly. 2. Get rid of gamy tastes. It's like the same when people use cooking wine with fish dishes. It cuts down the fishy or gamy strong tastes. 3. For pork belly, it cuts down the fattiness and greasy/fatty taste. The chemical change is subtle because the alcohol burns off during boiling, and the exchange gives the pork a milder, less greasy flavor.

@TAMANDTRAM Growing up, my mom just boiled the pork belly in plain water. You can see the grimy protein/blood residue on the cooked pork belly. She would just rinse it thoroughly and hand wash it again under cold water. It took a little more time, but it was just as clean. Later in life I tried blanching the pork belly using 3 different methods, (1. Chinese cooking wine and 2. with ginger and scallions, 3. with white vinegar) and discovered it does change the flavor of the pork belly slightly. It's a subtle change and it just boils down to personal tastes. Also my mom was old school. I don't think she learned this recipe using American peanut butter and her sauce was 100% Vietnamese--no peanut butter. Just natural crushed peanuts sprinkled on top. I've since used variations of ingredients when making sauce. For some of my American friends who have peanut allergies, I either leave out the peanut butter or I use Chinese sesame paste. You should try Chinese sesame paste in case you have American friends with a deathly peanut allergy. It adds an interesting nutty flavor and taste to the sauce. My mom just like all older generations used pork belly too. As I grew older and developed high cholesterol, I left out the pork belly. If you're looking for an added dimension to flavor assuming you want a little more than just shrimp, try adding fried tofu. Some people even make this roll with just deep fried tofu as an alternative to a no cholesterol recipe. It's not the same in flavor, but it is just as delicious in its own way.
