It's also good to put your meat mix in a jumbo muffin pan, spoon some cornbread over each cup, bake until corndread is done. I live alone & put the left overs in a zip lock & enjoy later.

THANK YOU !!! I made this tasty dish the other day, and it was enjoyed by all. Some had seconds, and one person had thirds. It is really easy to make. I made the cornbread from scratch. To the batter, I added 1/2 teaspoon chile powder and 1/3 cup medium salsa. This is a dish that will be made many times in my house. Once again, THANK YOU !!!

I tried your recipe and it’s now a family favorite. Done a few things different to ingredients. Added chopped chili peppers and onions to batter and diced jalapeños to main mixture. We like things kinda spicy, and was great with BBQ ribs.

This looks amazing. And not overly complicated either, I appreciate that. I'm gonna make this tonight. The only thing I will do differently is put it under the broiler for 3-5 minutes after it's done to get some golden hour action. Crusty brown cheese zomg, I always do it.
