I'm guessing somewhere in the Twin Cities but online is much more cost effective than 4 hrs travel time plus shopping time.

I live in Korea, and I found several local baking sites that sell black cocoa powder, as well as a shopping mall specializing in imported food products/cooking supplies (from wine to seasonings to extracts to kitchenware) that's only 15 minutes away from my place. Baking sites can be easier to find than you think - if ordering online is an option! I have several stores I order from, and I do bulk orders whenever the stuff I want/need are on sale or happen to be available at a certain store.

To be fair, the original recipe would be a true no-bake cheesecake since it would require actual Oreos and actual cream cheese (as opposed to a baked cheesecake which mixes cream cheese into a batter to make a fluffy cake). This recipe will probably work out as a tutorial for people who have run out of/have no access to either.

Gemma, what is the difference between ricotta and cream cheese? My grandma used to make ricotta like this, I'm confused...

Cream cheese is more of a smooth, spreadable consistency and has this "funky" sour flavor. Gemma's recipe does not have the same tangy flavor that comes from the aging/fermenting process. I find ricotta rather neutral-flavored and slightly more grainy in texture.

First, let me say as usual, that red is your colour!! You look so pretty in red..! Secondly, could you explain to me what happened with my baking? Last night, I decided to go off the beaten path with a quick bread recipe that I had. I usually only use baking soda, but decided instead to add 1 1/2 tsp of baking powder in addition to the soda and it threw the bread off, esp the top.It was almost like a corn muffin or something like that. Can baking powder to soda ration really knock something off that bad? The taste was great. The texture I was disappointed in. Thanks!

You can leave out the baking soda because black cocoa has no acid and doesn't do anything to the finished cookies, and this goes for any recipe you use black cocoa and baking soda Black cocoa is DIFFERENT from dark cocoa, black cocoa is even darker 🙂

I combine heavy cream and milk when I make ricotta. I only use milk in making cream cheese. Hope this helps.
