I’ve made lots of pizza dough but for some reason I followed what you said and did: cover the dough with a towel and let it raise. 4 hours later, I had a dry crusty shell on the dough balls. Probably would be good to spray or rub with oil, especially if they’re going to rest for hours. The pizza turned out pretty good.

I am used to always make my pizza dough on the wet side in order to promote chewiness in the end product. Yours seems to be on the (extreme) dry side. Is there any theory on why wet or dry would work better?

xandrios if you cook it quickly like I will in the next video you won't lose moisture. Under 5 min and you're good

I do almost the identical recipe except with a little more water and olive oil. I think it comes down to preference.

That dough looks awful. Try 3.5 cups flour, 1.5 cups water, 1 packet instant yeast, 1 tsp kosher salt, 1 tsp sugar, and 2 tbsp olive oil. Bloom the yeast in the warm water with the sugar added (feeds the yeast). Add wet to dry and mix up, then knead and let sit for about an hour to puff up.

4ever Moh you have to put it in warm water and wait for it to rise, look up "how to activate yeast" also check the expiration date.

4ever Moh do multiple yeast tries at the same time so you dont waste so much time, the temperature of the water is key so play with that variable a bit. Also you need a warm place for it to rise.
