The Ultimate Rainbow Cake Recipe! | Cupcake Jemma

What's better than a Rainbow Cake? A Triple Rainbow Cake, obvs! In this video I show you how to turn the dial on your cake up to 11!
What you will need:
4 layers of your favourite cake
4 x quantity of my vanilla buttercream recipe
food colour pastes
sugarpaste + gum tragacanth/gum arabic
toothpicks
various tools and bits and bobs.

I made my sister's birthday cake with the rainbow icing inside a few years ago. From memory, i did chocolate cake (but only 2 layers) then covered it in chocolate ganache on the outside. I got italian meringue ALL over my kitchen but it turned out great and was a lot of fun to make! 😍

I'm only all natural plant-based colors - turmeric, powdered freeze-dried fruit, beet root powder, hibiscus powder, & the like. Just made this cake a few days ago and my daughter absolutely loved it! But instead of piping the rainbow buttercream in between the layers, I did a Chinese-style cream&fruit filling instead (less sweet) and everyone loved it! :)
