I think this is from Malaysia and we call it as Fried Kuey Tiaw. Kuey Tiaw is the name of the noodle, one of my fav type of noodles. The ingredients are basically red onions, garlics, chilli paste, soy sauce ketchup and the kuey tiaw. you can add any other ingredients you want like prawn, chicken, meat or other vegetables.

In most of Asia and other countries. Street Food is everywhere. It's delicious and inexpensive. At least with street food I can see exactly how my food is prepared and what's being added to it. If you've ever been to an amusement park, sporting event/concert or night market and have eaten food. It's basically the exact same thing. So, you eat street food. Hush.......

@ Carmen Lopez - Yeah maybe you can see how your food is being prepared, ok, but you don't know what they put in : What kind of (recycled) vegetable (or animal ?) oil is it : Corn ? Palm ? Soy ? Rapeseed ? And what can they say about the fish/chicken/meat quality : Fish from polluted waters ? Poultry grown on gazoline-soaked soil ? Beef beyond all sanitary boundaries ? How do you know if the rice is really normal rice (there has been many huge rice scandals in Asia - part of it has been exported to Africa too, btw) ?? Do you think your stomach can handle food that has been cooked on a plain (rusty) steel pan ?

This is called Char Kue Tiaw, Fried Thick Rice Noodle , street food now available at 5 star hotel & high class restaurant. Popular among asian country with variety of cooking style and ingredients, but taste almost the same. It is yes unforgetable rice noodle bcoz it so tasty . The castrol oil mention is harsh. That is actually the mixture of sweet dark soy sauce, light soy sauce & oyster sauce. The red paste is dried chillies. The indian from India complaining the most, don't you see your own country ? Yet the food is delicious but lack of hygine the most. Sorry it's just fact.

The white things are flat rice noodles called kuey teow in SE Asia. The black sauce is sweet thick dark soy sauce. He had chili paste added in rage beginning, and the tiny little things he added after the sauce were cockles, which are much like clams without the shells. This became a wet fried kuey teow dish. It’s smart to serve it “wet” because the noodles absorb liquid pretty fast.

Fellow Asian, specifically a Malay Malaysian here. This cuisine is called Kuey Teow or some call it Char Kuey Teow even tho it's not really accurate because the real Char Kuey Teow, the Chinese one, is actually dry and not gravy. Still, he's a street food vendor in a pasar malam, or a night market, a local weekly event where local hawkers and traders sell their products in each stall, usually this pasar malam is done in a wide field or a wide parking space. The thing is, it's true that the food seems delicious and all, and I think he's being hygienic enough, but coming from a pure local here, it's good but not that delicious. There are local street food that are really delicious, but these kind of pasar malam kuey teow are just o-okay. Unless if you're a tourist or a first timer, of course you'll be excited to eat it.
