About This Episode:
Today I wanted to showcase my 20+ years of knowledge and experience in Japanese cooking by making for you one of my favorite appetizers, Japanese Chicken Karaage. This is one of the most basic and traditional dishes in Japanese Cuisine. In this video I tell you my secret to getting EXTRA EXTRA Crispy. Hope you enjoy!

I like the fact that u dont have to double fry it cus you’re using a deep fryer as oppose to a frying pan. Thanks for this.

I was wondering if you could tell me what temperature you set your fryer to. Also do you think this recipe would work in an air fryer?

120°C for a few minutes (no browning at this stage) take out and let rest for a few minutes and then turn up temperatures to 180°C and fry until golden brown. I would spray a little pan spray on it if using an air fryer. That’s what I do when I do large batches of Chicken parm for banquet events (instead of frying I use oven) The spray helps with the color. I know he fried his only once which will work if you do smaller pieces, the double fry gives you a crispier crust and ensures that chicken isn’t raw as well

Why are the other recipes wrong? Is it because they fry twice, while you fry only once?

I think everyone have their own way of cooking Karaage and that is the beauty of cooking. So, I have to disagree there is no wrong or right way. Just the way that anyone can enjoy.

Other than the rice flour instead of the usual AP/corn flour mix, this recipe is no different from any of the dozens of other karaage recipes I watched so far, anyway.
