You can slice tomatillos, bread them and fry like fried green tomatoes. You can freeze them for later also.

I love taco soup but you cannot make a small batch. When I make it hubby and I can eat it for a week! No one wants it that long. I thought of canning the left overs but thought the beans might get overly mushy since they are already canned once. Suggestions? So I don't have to eat it for 4 days? Apple pie filling will boil over when canning it. I've had the problem as well. I follow an Amish recipe that is very similar to the one you used except it uses permaflo instead of pectin. They also recommend filling below the 1 in slightly. Don't press that 1 inch like we do with other things as the apples expand and also create juices as they cook so a generous 1 in head space is what you want so they don't over flow and not seal.

For the soup, what about if you make it and then freeze it in 2 serving packaging, then you could have periodically without getting tired of it❤
