It's worth noting that we used to produce this in the USA, but just farmed it out and the fish basically became extinct. They live in Florida, and there's some research about this but I don't think the climate is right. The Chinese are taking an industrial approach and building these huge farms... maybe they can just keep making more! There seems to be lots of room in that river! Caviar and canned sturgeon for everybody!

The best ever natural black caviar comes from Romania from the maritime area of the Danube Delta - the area where the Danube River flows into the Black Sea. It is there where is the only natural place in the world for 4 different native types of sturgeons. Depends ... normally the carcasses are just discarded ... hopefully they also process the meat for local consumption ... this species of sturgeon is critically endangered, so why not use 'proven' massage techniques to extract the egg and maybe later release the fish into the wild once it's reached a certain age ... man am just venting my frustration but i hope this gives you a new perspective

No it doesn't work like that. Farmed animals cannot be released in to the wild, they will die anyway because they lost all the abilities to find food and survive on their own. However farming is a better way to get caviar because the species itself is endangered in the wild, so capturing wild sturgion to get eggs is even worse for the environment. So unless people have the money to keep them till they die of age, this is what they can do.

Most western countries consume way more chicken and beef per capita than Chinese, hardly anyone but vegans and animal welfare supporters (which is like 10% of the population?) care about them being slaugtered. reality check: farming sturgeon does not in turn protect the species. You make them weak by not allowing them to be native fish out in the wild, and overtime they grow deformed and incapable to adapt to the outside waters, if escaped they can ruin a native species of sturgeon. The meat to a farmed sturgeon who barely swims freely in restricted, close-knit waters will not be the same as one from the wild, and I'm assuming the taste in caviar will also see the same fate.

In its humble beginnings, caviar was initially considered to be peasant fare, easily harvested, salted, cured, fish eggs, it was only after people of wealth acquired a taste for it that it became such a lucrative and expensive menu item, to the point where it became illegal for anybody but noblemens personal fishermen to target and harvest beluga sturgeon

I'm talking about post industrial China. In the 1960's much of China was very clean and pristine. And it could return to that eventually. Probably 90% or more of the inhabited areas of China have contaminated soil, air and water. And from what I have read the death and illness levels related to pollution are staggering, although hard to measure directly. Can you think of any River or lake in an inhabited area of China you would feel safe drinking unboiled or untreated?

@Scooter Scooter no, that is how long it takes to mature to have eggs the first time. After that the fish is already mature, so it should have more and more every year as it gets older.

I downvoted this video, not because im a racist "made in china, cant be good", but because Munchies has raised the bar so high with Halaigh Whelan-McManus' series on Norway, that this video feels flat. if you lot havent seen it, do yourself a honor and gobble down that series.

Unfortunately I think there is a prevailing thought that if it isnt made in 'my' country, then its automatically sub-standard. The "made in china" derogatory statement is, in my eyes, a ignorant, biased, and racist comment. You can disagree if you wish

It's only racist if you're automatically assuming all Chinese people are bad because of their bad products. On the other hand there's nothing wrong with thinking Chinese products are bad because of their unethical behaviour (the "chabuduo" mindset) which is simply just a part of their culture. The former is racist because you're judging a whole race by some bad eggs and the latter is just pointing out flaws in someone's culture, and every culture has its flaws.

It is all about economy of scale, and productive efficiency. China is able to produce everything cheaper, with much more variety ( good, or bad) than every other country for the items it exports.

Cheap means the poor and middle class provides alternatives and saves money to be used elsewhere. It also creates competition of incumbent players and forces them to either produce cheaper products or offer some benefit like better quality or different options to existing products.
