Carrot salad is called "chimchi" which originally comes from korean "kimchi" which is made of cabbage, but the carrot one is obviously made of carrot. If I am not mistaken, koreans who live is Uzbekistan first introduced carrot salad to this country, and then it spread across whole nation because it's so tasty

They are same, but sugar in yellow carrot is less. Due to it more chefs prefer to use yellow carrot, because it makes your palow crumbly. The sugar will make rice sticky and your palow will not be as good as you expected.

In Ajmir, India we have cooking vessel of 14 feet diameter and a depth of 9 feet, these are 400 year old pots and are continuously in use for last 4 centuries. Food is regularly prepared for about 15 thousand people in this pot. There are 3 such pots in Ajmir Dargha

Khalid, I wonder if you tried Kabuli Pulao (maybe when you were in Peshawar) because this is somewhat similar to that. Amazing how there are so many similarities between countries along the Silk Road, from Xinjiang to Central Asia and the Caucasus, and from Pakistan to Zanzibar in the shores of East Africa.
