6:08 holy crap, Jack cant read instructions. I thought putting potatoes in 1 inch of water was weird and I see why. The instructions say "cover by 1 inch". So, following a recipe the man still manages to mess it up.

I went to culinary school and worked in fine dining for a number of years. This is a ROYAL screw up on jacks part. This man Butchered this dish. The man has absolutely zero idea what he’s doing. He has no, I mean Nooo technique! First he used way too much oil and butter for the fish, he sautéed the fish for too long, he should have roasted the taters in the baking dish separately. He fucking BOILED shallots in water (who, THE HELL does that) and over all it’s just one big horrible mess. Can’t knock him for trying, but the guy really needs to find some weekend cooking classes at a local community college or private event.

I actually looked at the recipe and the original video just to see how much of the fault is on Jack's and although the recipe could be written better I think most of it is on Jack's. 1. Recipe says baby potatoes or NEW red potatoes. New red potatoes are a lot smaller than the ones he uses so it's significantly easier to cook and thus would've been cooked if he didn't get a big ass potato. 2. Although the recipe says reduce for around 7 minutes, it says it should take 7 minutes to reduce to 1 cup. Although the time is wrong (not sure if he boiled before starting the timer, which he should've) but that looked like well over 1 cup which can contribute to how soupy it is. It's supposed to have liquid but it's not supposed to be THAT much. I don't even think the video shows him bringing it back to a boil after adding the broth. 3. Like you said, he cooks the fish for 10 minutes. He was only supposed to cook it for 4. So he overcooked the hell out of it. The biggest offense I think was the potatoes. No recipe is going to have a soup with two giant potatoes halves sticking out. If he looked at the picture he could've at least come to the conclusion that he should maybe cut them smaller. Winging a recipe that you don't understand isn't cooking.

5:20 This is a valid technique. MOST of the time. Cooking two things at the same time in the same container happens all the time, what doesn't happen is that it's put that way. Usually there's supposed to be some kind of difference between the potato and the fish, like sort of layers. But he certainly did it wrong. But the main problem here is that he didn't even cut up the potatoes. He just left them there raw and even without peeling the skin. Usually that works for mashed potatoes and other recipes but I can tell that this is not a good way to cook it. Plus, fish and potatoes need different temperatures to be cooked, so one can end up burnt while the other cooked enough. TL;DR: Cooking different things in the same container is normal and happens, but he did it wrong.

sorry for being pedantic, but sushi is the name of the rice, sashimi is the "raw" fish, which is actually prepared by freezing it to kill of parasites, same goes for all other forms of "raw" fish, as its actually dangerous to eat fish truly raw.

This is a real thing... but way overcooked fish and potatoes undercooked... I could make this recipe good if I changed little things about every step lol. Searing then baking with parboiled potatoes so both are done at the same time looks way too complex for jack. Potatoes have a way WAAY longer good window for eating between undercooked and overcooked than Salmon... I'd want lil red potatoes half cooked and the fish still Raw so both would be crispy and perfectly done... except I'd do this with chicken or pork... actually seared pork chops and potatoes sounds good, I'd just need a better gravy.

I'm with you. I don't get why you have to put it all together in the oven... Fry your salmon (or other fish), boil your potatoes - maybe give them in a pan after that with some butter, thyme and parsley, sautee your spinach with onions and garlic and make a simple mustard sauce out of a roux, mustard and broth. Even if you overdo the salmon a little, it will be better than this

People seem to fail to understand that cooking fish isn’t like cooking red meat or poultry. If your salmon is wild caught then you can finish cooking a fresh or thawed fillet in 5-6 minutes by boiling/poaching it in a pot of water w/ some vinegar or lemon juice.

I have put potatoes in with a turkey breast before, but I cut the potatoes into eighths and covered them with chicken stock so they pick up some flavor as they cooked. I also used a pair of tongs to see how much force it took to crush a piece of potato to check the doneness of them. So putting the protein and the potato in the same dish to cook can be done, you just want to make sure you actually, you know, fully cook the potato.

I'll give you an easy video, that comes from two separate videos: In one video, Jack makes a smoked brisket - episode "Smoked Cajun Brisket - Smoking Series (Traeger)" He then uses it for a chili for a church chili competition as his secret weapon. The problem is he loosely wrapped it in aluminum foil and shoved it in his freezer... over a year ago - Episode " Church Chili" The fail goes beyond just the cooking this time.

Yes you can roast meat and potatoes together. One of my favorites is a bed of potatoes and a pork loin on top, maybe onion and peppers, throw it in like 12 layers of tin foil (really just 2 or 3) and probably 400 degrees F for an hour. Trust, I'm no chef but it works on a grill too.

Cooking fish and potatoes together is very common in Portugal. Here’s a few critical mistakes Jack made: 1- potatoes don’t go into just an inch of water… their supposed to be submerged by a full inch. 2- Boil the water before putting in the taters 3- Sear the fish for 1 minute each side…. Not 10. In fact, it doesn’t need to be seared at all, but if done right it does add a nice crust. That bad boy was already cooked when it went into the oven.

The thing with the potatoes, you’d usually do that with a vegetable with more aromatic qualities to it, like onion or something, so that they kind of mingle in the oven and infuse the fish with its flavor. I’ve never seen it done with potatoes tho, and I question the purpose of it as opposed to just putting baked potatoes on top of the fish.

The recipe calls for "new potatoes" which are smaller and therefore take less time cooking, furthermore they are precooked. The salmon on the other hand is supposed to be only browned in the pan and then cooked through with the potatoes. So unfortunately, Jack is doing it wrong, technically.

You can bake things along with the fish. I use an aluminum foil pouch to sort of steam and bake simultaneously, however, I start with uncooked fish so it doesn't overcook.

You really need to do the video where he entered his church chili contest and was convinced his canned ingredients and secret weapon of year old, rotted brisket was going to ensure victory. And then he didn’t even finish top 3, he complained that the other contestants cheated.

What’s remarkable about this dish in particular, is that jack is the laziest man in the kitchen, he wont follow a recipe because of the amount of instructions, yet a dish which was clearly a flop before starting, he managed to muster the strength to follow the multiple step instructions.

fish and potatoes in a casserole dish is fine if you do it right, and have the right liquid to braise it in. especially nice with onions and carrots, but this is Jack, so who am i kidding

I get excited when my family cooks fish. I get worried when jack cooks fish. I've seen cooked salmon, and it's not supposed to be like that. He's supposed to peel potatoes, and he didn't even cook them right. The inside of his salmon is obviously raw, he's supposed to cook it all the way through 💀

On the subject of cooking fish with potatoes, I could totally see this happening with halibut, the fish people usually use when they make fish sticks, because you can cook the potatoes in the fish broth, but the huge turn off of this recipe, is that this chef put the whole potato in which means that the potatoes are not going to be marinated fully, which results in a half dry potato which would taste really odd when you are eating it with fish Edit: come to think of it you could use that critique for the entire fish as well
