I gave up all fast food, restaurant food, hot bar food two years ago. If I cheat I immediately feel the effects of poor sleep and digestive 'discomfort'. It's getting scarier and scarier, and harder and harder to find clean pure foods in any chain grocery store. Even the outside aisles are full of tainted goods. So I'm trying to grow my own vegetables (mostly greens) and keep chickens for eggs and buy only meats from local regenerative farmers (I'm lucky to live in a region with many young homesteaders doing the right thing). I've lost weight, better mood, and brain fog lifted.

First time seeing this woman, I love everything about her delivery. Pre-ordered her book. I'm a new comer to learning about the damages of vegetable oils. Thank God for people like her and Chris Knobbe MD. I'm 67 years old but better late than never to cut out seed oils! The Ancestral Diet Revolution is also an excellent book.

I’m new to this too. It’s a lot to digest no pun intended. I watched her on another video speaking about seed oils and subscribed to her channel immediately. The general (uninformed) public has so much to learn about our diet and the link between our diets and the Rampant disease that the pharmaceutical industry doesn’t really want to reign in. Big food, big pharma, and big medicine. A recipe for disaster and trifecta of evil for our society.

I attended Food Label class yesterday with Community Health Team that is provided by our local 'health' authority (I live in Canada) and a Registered Dietitian spoke totally differently on veggie and seed oils. When I raised my concerns with her and mentioned that there is alternative research showing opposite than what they were teaching, it was brushed off and I was made to feel silly for even thinking such a thing could be true.

I also gave up all fast food years ago. I only eat at restaurants two or three times a year with my wife and each time I don’t feel well afterward, regardless of how little or what I eat from restaurants. Olive oil oil tastes so much better Main reason I don’t want to eat at a restaurant or fast food is because healthy foods won’t taste as good As long as I stay away from those businesses that sell me their cheap food products I enjoy healthy foods and can eat plenty without getting fat

### Key Insights 1. **Health Risks of Vegetable Oils**: - Vegetable oils, especially the "hateful eight" (corn, canola, cottonseed, soy, sunflower, safflower, rice bran, and grapeseed), are harmful due to their high polyunsaturated fatty acid (PUFA) content. - The oxidation of PUFAs during processing creates toxic byproducts called lipid oxidation products (LOPs), which cause cellular damage and inflammation, leading to chronic diseases like Alzheimer's, cancer, and diabetes. - These oils are considered "oxidative stress in a bottle" and deplete the body's antioxidants, accelerating the aging process. 2. **Processed Vegetable Oils**: - Factory-refined vegetable oils undergo extensive processing, increasing their toxicity by removing antioxidants and creating trans fats through oxidation. - Even organic options like canola oil contain toxins and trans fats, making them less healthy. 3. **Heart Health and Vegetable Oils**: - Contrary to previous beliefs, vegetable oils are not heart-healthy. They may lower cholesterol but increase the risk of heart attacks by oxidizing cholesterol-carrying particles. 4. **Weight Gain and Metabolic Health**: - Overconsumption of vegetable oils contributes to obesity and insulin resistance by disrupting the body's energy production and increasing oxidative stress. - Mitochondrial dysfunction caused by these oils leads to increased sugar usage and frequent hunger. 5. **Insulin Resistance and Oxidative Stress**: - Insulin resistance, a common metabolic disease, is driven by oxidative stress from vegetable oils, poor diet, lack of exercise, and smoking. 6. **Omega-6 and Omega-3 Fatty Acids**: - The outdated theory that omega-6 fatty acids are inflammatory and omega-3 are anti-inflammatory has been disproven. The negative effects of seed oils are primarily due to oxidative stress. 7. **Suppressed Studies on Vegetable Oils**: - Studies showing the harmful effects of vegetable oils on cholesterol and increased mortality risk have been suppressed and unpublished. 8. **Rise in Chronic Diseases**: - The increase in vegetable oil consumption over the past 70 years correlates with rising rates of obesity, diabetes, and other chronic diseases. 9. **Dietary Recommendations**: - Avoid fried and processed foods, focus on whole, minimally processed foods, and reduce intake of seed oils. - Consume an appropriate amount of protein (80-120 grams per day) based on individual needs and avoid over-reliance on protein powders. - Emphasize a healthy diet, community support, sufficient sleep, and meaningful life for longevity over specific fitness markers. 10. **Processed Foods and Healthy Eating**: - The emphasis should be on real, whole foods and traditional cooking methods over highly processed foods and vague terms like "ultra-processed foods." - A diet of 80-90% whole foods is generally sufficient for good health, as long as macro and micronutrient needs are met. ### Conclusion The consumption of vegetable oils, particularly the "hateful eight," is a significant health concern due to their high PUFA content and the toxic byproducts created during processing. These oils contribute to oxidative stress, inflammation, and chronic diseases such as Alzheimer's, cancer, diabetes, and heart disease. A shift towards whole, minimally processed foods and traditional cooking practices is essential for improving overall health and preventing disease. Prioritizing a healthy diet, sufficient protein intake, and a balanced lifestyle is more beneficial for longevity than focusing solely on physical fitness markers.

Great stuff, Dr. Cate. Glad to see you back on the podcast circuit, as you promote your new book. So I have a question about the type of fat that is stored around people's organs, that is purported to be very bad, and also the first place that the body will burn fat from (when it can burn fat). Is that fat around the organs saturated, or does it include the polyunsaturated fat that is stored? If saturated, then is the body creating a fat storage location that it can draw fat from that can be cleanly burned (with that being the reason to store it there)?

I think this could be further simplified. Make an effort to decrease intake of chemically reactive compounds: that is, unsaturated fats and digestible carbs (which become glucose.) Increase intake of chemically stable compounds: saturated fats and protein. The unstable compounds result in the production of irreversible metabolites: glucosepane (from excess glucose from high carb intake) and lipofuscin compounds (from unsaturated fats.) We have no known enzymes to take these irreversible metabolites apart nor do we have a way to excrete them. They accumulate at the lysosomes (cellular recycling facilities) and interfere with autophagy. Once enough accumulates, autophagy slows to a near halt and then the mitochondria can no longer produce ATP and melatonin (used as an antioxidant) because the waste products from energy production cannot be gotten rid of. With no or very low energy production, cells go senescent. Once enough cells in the brain and heart go senescent, death is imminent.

Why don't we simplify it more and get back to basics......Genesis 1:29 (KJV) And God said, Behold, I have given you every herb bearing seed, which is upon the face of all the earth, and every tree, in the which is the fruit of a tree yielding seed; to you it shall be for meat. Simple. It was only after the flood when God said man could eat animals (because there was no vegetation) that man's lifespan began decreasing rapidly. Before the flood people were living well into their hundreds - Methuselah lived till he was 969! - but afterwards the average was around 70yrs. What a lot of today's Christians don't seem to realise is that there won't be any eating of animals or fish in heaven.....so why are they not adhering to that principle now. God made us, He knows what we were designed to eat.
