5 lbs of pork belly
4 1/2 Tbsp of sea salt
Leave in the jar for 5-7 days
2-3 Tbsp of fresh ground galangal
4-5 Tbsp of roast rice powder
3/4 Tbsp of white sugar
Fresh ground chili 🌶
Leave it for a week or so at room temperature
You can fry or grill this and the taste is savory salt sour spicy
Opt out chili if you want the authentic regular fermented pork belly.
You can make it with beef with the same amount of salt .
