I never thought I would ever be on video talking about breadmaking.
Since starting my sourdough journey almost four months ago, I have become obsessed. I set out on a mission to learn all that I can and consistently bake good loaves to feed my family and share with friends.
A couple of important notes:
I just learned that the "poke test" that I talked about in the video is NOT used to determine when bulk fermentation is complete. It is used to determine when bread dough has finished proofing and is ready for baking. So you would do the poke test after taking it out of the fridge, and before putting the dough in the oven.
I have tried a couple of sourdough recipes and I like Pantry Mama's recipe the best. You can see the link below. I have tweaked the recipe to use 100g of active starter, instead of the 50g that it calls for.
I have two starters because I never thought I could get mine to work from scratch, so I bought a dehydrated one from Homestead & Chill. Once I did that, my starter activated and started doubling. So, I have two.
My Jalapeno & Cheddar loaf is (I believe) underproofed and underbaked. Due to the inclusions, I would give it 40-45 minutes in the oven with the lid on at 450F, and 15 minutes with the lid off at 410F. It still turned out amazing and my husband ate the whole loaf in about 3 days. He loved it toasted with cream cheese or butter!

Thanks for sharing! I have started maintaining a sourdough starter in the last couple months, so I was excited to see this video in your newsletter. Some questions: - Why do you use a "clean" jar with each feeding? - Why do you use the all-purpose flour to feed it instead of the bread flour? Love the breadmaking notes journal!!

So true about trusting the process! There have been some loaves where I get so annoyed and wonder how bad it'll be, but it always turns out well enough for me. The same goes with your rec to stick with one recipe consistently. I'm getting ready to branch out into different goods (I really want English muffins and pretzels!) but I definitely think sticking with a recipe works well for the new/novice sourdough baker.

I have tried and tried to get a starter going and failed and then gave up. I will give your method a try. Wish me luck. I ordered the ingredients and utensils from Walmart just now for delivery Wednesday and will give it a whirl. Thank you for your detailed instructions and tips.

This is so helpful, hubby wanted to get into making sourdough bread but he's lost his mojo after a couple of starter failures 😢 BTW, that sprinkler you're using for the rice flower looks like a tea ball!

My Mother always used King Arthur and swore by it and I do the same. I make Irish Bread but beyond that I have never done any other bread. It's scary but maybe I should be brave and just do it!

Great video so far! I’m still watching. I haven’t made any starter, as of yet. But I want to. I have a question…you mention you have well water, but then you also say you like to leave water out in a glass pitcher for the chlorine to dissipate. Are you adding chlorine to your well?

I noticed you put the bread in the oven with the lid on but when they were completed you brought them out of the oven with no lid. At what point did you remove the lid & why? Thank you!

I have not tried to make bread at all other then Texas Roadhouse rolls once. I'm not understanding starter, I do understand it is to start the dough but what is the starter? I hope that makes sense.

Never mix on your scale. It will mess up the scale and it won't weigh correctly.
