The Hefe should be fine fermenting for 3 weeks, but the stout should sit for much longer since hit has a much higher specific gravity. You should let the stout sit for about 6-10 weeks. I have been brewing all-grain for over 5 years now and love it! The book in the video has some great info as well. I have a copy of it also. I would love to help y'all. If you have any questions feel free to ask me. I am happy to share my knowledge and experience.
