Hey Alton, it took me years to get step 3 correct because I use to wrap the meat immediately and was told by an very experienced pit master that the meat was still cooking in the foil after it was removed from heat. Had to let it rest first then wrap. You are very good at what you do sir and I always enjoy watching your vids. Thanks for sharing 🫶🏾

Hey there! Yeah tell me about it. For a while there it was a craze going on throughout KZbin telling people to take the meat off and put it in a cooler wrapped in towel, stuffed in a paper bag. lol I was like WHAT??? All that does is turn your meat to mush being it just overcooks it. I'm glad the REAL word is getting out. A lot of us know a few things that we've been doing forever, but somehow some people get a hold of it and make it seem new. As long as it makes good BBQ and people enjoy it, I'm all for... Curious here, what do you have problems with when you are cooking?

@@TheDawgfathasBBQ my wife and I are really big rib fans so thats my go to smoker meal. I tried a couple briskets but I cant get it right so thats a work in progress. Chicken and pork roasts are every few weeks or months. The best cook I’ve ever done was last Christmas. I brined my turkey for 24-30 hours. Then smoked it for 4-5 hours at around 250 and high for 1/2 hour or so until done. It was by far the best turkey myself and my family has ever had! I’ll keep an eye and read about past cooks to get more ideas. Thanks again and keep sending those great recipe’s.

Brother Alton, so good to see you. Its been to long. After you doing a video like this i always looking forward to the day I'm healthy enough to get you up here salmon fishing and talking about bbq while having a few beers. I believe the only tricky thing about bbq is for folks to realize just how many variables there are. And if you change just one thing it will normally affect the other. Ill give just one example. Binders or no binders? I believe this subject starts with knowing how much rub do you intend to use. Myself i prefer to let my star of the show shine. If it's beef then i want that flavor to really come through. That means the seasonings are supporting cast. So i only season enough to boost but not hinder the beef flavor so i don't use much seasoning. If you go light on the seasoning you don't need much if any binder. So for me i very rarely use any binder. I just don't need it. However folks who like to use a ton of seasoning will most likely need to use binder and perhaps a heavy duty one at that. Such a seemingly simple subjuct can get very complicated very quickly. Anyway happy to see you post. May you and your family have a great fall season. 🍻🎃🦃😋

@TheDawgfathasBBQ im doing better. And that's what matters. Im coming up on Halloween week like everyone else. But unlike other folks Halloween has a new meaning for me. So last year the week before the holiday I woke up very sick. I couldn't think and was very week. I got them to send a ambulance and get me to the hospital. When I woke up the next day I felt much better but not well either. I asked my nurse what was wrong and she informed me I had a temperature of 103.9 f. I was sepsis and almost died. I was in isolation from others. They found what the cause of the infection was and it was my right foot. 2 days latter they amputated my right leg below my knee. Yuppers my life changed very quickly. I haven't been able to drive since then. Sounds awful right? Well I did finally get a new leg and my eye sight has improved enough that I'm currently just getting my car tags and insurance so I'll be driving again soon. Sorry about the length of all this but there is a happy ending. I now look at Halloween differently. Not a celebration for the dead. A celebration of life. I should have died a year ago. But I didn't. It's a 2nd chance at life. There's still more challenges ahead but I'll just take each one on one at a time. So good things ahead. Stay tuned. For more smoke on your pellet grill you can get a smoke tube that you put pellets in and light them and place the tube in with the meat.

@@TheDawgfathasBBQ Oakford 580 pellet grill and it has changed my life. It makes grilling large cooks so easy. Ribs, roasts and briskets without sitting there babysitting the grill all day to keep the temp in check. Love it!

Great job Alton! You've got a ton of content here that I hope the less experienced will learn to appreciate. I haven't done beef ribs on my pellet cooker, I usually use either a barrel smoker or the offset, but like you I like to start with a lower temp, higher smoke output, though on those wood burners I only do around 2-3 hours at the beginning. It comes down to how much smoke flavor folks appreciate and want to achieve. You inspired me to get the Huntsman, so the next batch of beef ribs I'll do will be using that with the venom to control the low temp smoking at the beginning. Have you tried that? Would appreciate you input if you have. A couple other thoughts on plate ribs. I used to buy prime graded ribs but have switched to only buying choice now. My gut is a bit more sensitive to the high fat level of prime now that I'm nearing 80 years old. The lower, supposedly, intramuscular fat of the choice makes it slightly easier on the belly. Much like your early portion of the video, I've done both a thorough trim of the fat cap on the top, and no trim at all. Again, with as much intramuscular fat as these have, it works great either way.

I let me Sam's Club member ship go since I have a Costco and Restaurant Depot closer and both of them carry more prime. But yes, choice was my go to for a LONG time! I absolutely LOVE the Huntsman. I'm hoping to get more filmed cooks in on that unit soon. I have done some reverse seared steaks on them as well as ribs and that thing is AWESOME!!! I am also going to hopefully get a cook in soon with a brisket comparison on the Huntsman vs. Kettle with the Venom. That should be interesting. With your Venom, are you running it with the battery as well?

@@TheDawgfathasBBQ yes, I used your discount code and got the "free" battery. I've only had the Huntsman for a couple weeks and have done mostly kettle style cooking. I did use the Venom for roasting a batch of jalapenos to make my own chapotle, ran it at 160 for 3 hours, worked great. Look forward to your doing more with the Huntsman, I like your style. I think you're in Texas, no? I'm in a little village half way between Austin and Waco. We don't have Costco or Restaurant Depot, so Sam's is my easiest choice.

Great question! Absolutely you can dive right in if you want to. I do find that the rest time for me yields a better tasting rib however. It may be all in my head, but as with brisket, the rest time definitely makes a difference to me. I would say try it both ways and see what works best for you. Thanks again for the comment.

You know....as much as we all or most of love brisket and the skill of mastering a beautiful smoked brisket for guys like me (us) who do not cook for a family a.k.a. live alone brisket can be such a huge waste. For me brisket is only at it's finest the day it's made and eaten. Reality is it gets cut up, vac packed and thrown into the freezer and no matter what they say it will never be as good except for sandwiches or used with other dishes and that's where "brisket on the bone" can be perfect. Little to waste. Even easier to cook, what can be better?
