If you're talkin more smoke when all you have is white smoke then you're just getting more bad smoke on your meat... A fire with white smoke isn't hot enough to create blue smoke that's where you really get your flavor .

IMO, preparation is my favorite part of BBQn. No need to make a grocery store because you forgot something if you plan well. Love your channel bro!! On a pellet grill, I dont wrap. I hit it with straight smoke then some low n slow.6 - 7 hours you can acheive some tender bite pull off the bone ribs. Not fall off the bone, bite off the bone again. Only time I really wrap unless im impatient is when I do. But then again that mode is always hot n fast. Great cook brotha, I love me some ribs. Baby backs are my favorite to cue up.

I owe you this Dawg! Bought my pellett not too long ago. As always I do my research after research . Bought in to the 3 2 1 method and didn't work. wasted so much meat and $$. And then I discovered the 2 2 1 method. Wow! Great! Only to find out again, time , money meat wasted . How come the experts and popular peeps can do it at home and I cant? I knew i was overcoooking my food. Dry , burnt butter , too salty. Argh. I knew less was the key but Dawg! You brought it home for me. Practical. Your simple rub as well! My whole family was satisfied! From young to old! You gave me a good foundation to only do these baby backs better by tweaking little here little there. My hats off to you good Sir! DAWG! Bro THIS IS what it's all about!!! I think a lot of people watching videos assume that the information they they get will be the "be all" to get them over the top. When you approach it as you did in the fact that it is rather a good foundation to allow your own creative juices to come out to develop your own style, you afford yourself the best results possible at that time. Once you continue to develop your own style you hone in on perfect results for YOU... There are no rules to backyard BBQ so definitely have fun with the process and figure out what works for YOU!!! I've been watching a LOT of BBQ video's on KZbin. I really enjoyed the video and was wondering about the "total cook time". I usually make the fall off the bone ribs (wife's favorite) with roughly a 5-6 hour cook at 225 on the Pit Boss. What was your total cook time? These looked great!

Hi Gary. I was wondering the same thing. Kept reading the thread. Found that Dawgfatha answered it to a post from BBQ Barry....Pasted here From Dawgfatha: "Welcome to BBQ Barry! So I typically have ribs completed in 3-4 hours total time. 275F is a comfortable temp for me so that's why I cook at it the entire cook. Just remember the stages of the cook: 1 Smoke the meat to the color you want. 2 Tenderize the meat to the tenderness you want (wrapped or unwrapped is up to you). 3 Rest the meat. 4 Eat the meat... If you remember those steps along the way, you can cook at whatever temp you want to that is comfortable for you. The times will vary but it is something you'll figure out along the way. GOOD LUCK!!!"

I've got a pit boss classic arriving tomorrow.....I've never been good at grilling because I need exact time, temp and direction. Soaking up as much info as I can because I love a nice bbq (made by someone else). Have you used a pit boss?, flaws, positives......corrective cooking times/temps that you know of? Cheers

So I've only used a Pit Boss once and it wasn't a good experience. It wasn't my unit and I can't remember the model. Basically we did a bug cook for a festival and put a couple of briskets on it to cook over night. The cooker apparently cut off in the middle of the night and it had a grease fire twice. Finally just pulled those off of that grill and put them on the brick pits we were running with the other meats. Experiment over. With that said, I have MANY friends that LOVE their pit boss cookers so I'm hoping it was a one off experience. One piece of advice for learning BBQ is to not get hung up on temps and times. That will lead you to inconsistent BBQ. All briskets are different and will cook a little differently. If you understand the processes you are doing in the different phases of your cooks then you will develop feel and make a much better product. Just be patient and enjoy the process of figuring out what works for YOU...

Welcome to BBQ Barry! So I typically have ribs completed in 3-4 hours total time. 275F is a comfortable temp for me so that's why I cook at it the entire cook. Just remember the stages of the cook: 1 Smoke the meat to the color you want. 2 Tenderize the meat to the tenderness you want (wrapped or unwrapped is up to you). 3 Rest the meat. 4 Eat the meat... If you remember those steps along the way, you can cook at whatever temp you want to that is comfortable for you. The times will vary but it is something you'll figure out along the way. GOOD LUCK!!!

Great video but you did not mention how long you cooked the Ribs wrapped and unwrapped. Two very important details to follow or the whole rack can be ruined. Going by color, not so easy for beginners.

Soon as you said HEB, I knew what state you're in. When I want a little sweet heat on em, the HEB TX Sweet Heat is pretty dang good, I just add some extra black pepper to it. I like the way you keep your rubs simple, not 12 or so different spices. Used to do all the different spices over 20 years ago, found that keeping a rub of SPG is really the way to go, let the meat and smoke shine thru, not a concoction of this and that. Your channel is very informative for all the beginners, and even to some of us seasoned veterans. Have a good one.

Hey!!! I followed your video for my first smoker experience ever! I grilled up 2 BBQ racks on a Traeger. I subbed the “butter” for some rosemary compound butter that i left in the smoker for continued use! It turned out amazing and was a total show stopper!! I am forever grateful for your help Dawg Father!

I have followed your recipes on chicken wings and pork ribs. Brisket is next. I have never cooked much outside before and just bought a pellet smoker. THANK YOU for your insightful demonstrations and the simplicity of your instructions. My meats have all come off the grill with excellent colors and taste. Keep up the great videos I will watch them all

Thank you so much Tim! I am glad that you are finding value in what I am doing here and that it is helping. I love hearing stories like this so again THANK YOU!!! Good luck with your brisket. Just follow the brisket for beginner's video and I KNOW you will be fine. Just be PATIENT with it. Also if you REALLY want to take that brisket to the next level, REALLY let it rest. After it comes off the pit, typically the internal temp will be over 200F depending on the tenderness you shoot for. Pull it off and let it rest down to around 160F. At that point, (I'm assuming you may not have a warming oven, so) pop it in your oven wrapped with the oven set at 155F. Allow that brisket to rest in the oven for a good 8-12 hours before you slice it. TRUST ME!!!! I usually time my cooks so that I am pulling the brisket off the pit at night to rest over night and have for lunch the next day. Just try it brother... Good luck!

Just received my first used pellet smoker and wanted to try it out. Probably the best ribs I've ever had. Your video was very easy to follow with great explanations on each step. Can not wait to explore your other videos. Hope you have a whole turkey video for Thanksgiving.
