I was lucky enough to grow up just a few miles from the farm in Shropshire, England where they filmed those series. It's a working farm museum and we used to go there as kids to watch the shire horses pulling the plough and the dairy maids churn the butter. Such a special place. I've taken my kids many times and they love it too. Great video - thank you x

Love those series - recently made a colonial Thanksgiving celebration meal using all recipes from the 1700's...the beauty of real food, real flavorings and culinary history. Christmas could be done the same way. I don't eat much flour and sugar - crustless, sugarless pumpkin "pie" with an array of spices and flavorings....surprisingly flavorful and satisfying with the help of properly grown real food, real flavorings and culinary history. What our predecessors knew that we don't...truly beautifully humbling.

I have very fond memories of end of postwar rationing traditional hot water crust meat pie made with lard or beef dripping and your version definitely looks extremely tasty. I love the emphasis on really good quality, but economical cuts of very slow cooked beef. If you want to see a traditional English version, I recommend John Kirkwood’s KZbin channel.

This video reminds me so much of Julia Child's original show. She always taught about cuts of meat and didn't want the recipes to be fussy or complicated, and then showed how to serve them on a lovely table. Well done, Shaye. I can't wait to try this!

A great filling for hot water crust pie that can be eaten cold in the summer is alternating layers of chicken and sausage meat. The fat in the sausage moistens the “dryness” of the chicken. The layers make each slice so attractive. We called it picnic pie.

Every Christmas Eve we use to make Tourtiere, a French Canadian (not sure where it originated) meat pie. It's made from hamburger and pork burger and we always made it with apples which was traditional in our family.

I am 58 and have never had minced meat pie. I noticed a jar in the store a few days ago but thought I had better look into what it is. Thank you for this educational video on the topic. I love it. I will try it.

I love Victorian/Edwardian Farm, Victorian Pharmacy and many others in the series. I have Edwardian Farm on DVD. 😊 You will most likely love the Absolute History channel. They also have programs where ordinary families and celebrities visit eras down through the ages. When watching programs like this there was one episode that spoke of how many calories folks like this would have needed to keep them alive and it was something like more than 4000 😮 so believable with what they had to do but shocking when compared to today. Love this Shaye. So educational and fun. 😊

Two archeologists and a historian. Both Alex and Peter are archeologists, Ruth is a historian. The series are Tudor Farm, Victorian Farm, Edwardian Farm and Wartime Farm - for those that want to watch them. They are available free on KZbin. Regarding the pie - what could I use instead of creme fraiche? I can't have dairy so need some other idea.

So, searing the meat doesn't seal in the moisture. That is a very common myth but it's not true. What it does is develop flavor through the Maillard reaction. The browning gives it flavor.

KZbin analyzes your posts for relevance and popularity these days so just because you post something doesn't mean it's readily visible. Sometimes you have to sort for your messages and if it's not visible KZbin might have found your post not relevant and filters it out. Your message is still there...KZbin just doesn't care to make it super visible.

This pie crust will still brown without egg wash. It just won’t be shiny.

I know this comment is quite old now but in case it's helpful, I brush with milk instead of egg sometimes and it works well for golden pastry 😊
