Tip: Never let your bell peppers go bad. Chop them and put them in the freezer in a freezer zip lock bag. When needed pull out what you want and use them in recipes you cook.

Green red and yellow bell peppers get soggy after they thaw out but I tried freezing those mini sweet peppers that come in a bag do not get soggy at all.

Yum! I'll add this to my weekly soup rotation. I have some leftover slow cooker bbq pulled pork from tonight's dinner. I'm going to make this soup in my slow cooker without the chicken tomorrow and stir the pork about 10 minutes before I add the sour cream. I agree that Mexican cornbread will be a nice accompaniment. Re-purposed leftovers :)

This soup looks so good. My husband can’t eat any kind of peppers, so I would have to leave those out. We buy the Taco Bell tortilla strips at Walmart and like them better. My husband needs to do second cutting of hay also but of course the fuel pump on our tractor had to go bad. Waiting on the part. Please say a prayer for my son who is going through anxiety problems right now and I know Bryant has dealt with that. My son does have the Lord in his life but needs prayers. Thank you!🙏♥️

You mentioned Netflix….curious if you’ve watched The Chosen. When I started it, I had to binge watch….so good! I know the writer took some creative looks at the life and backgrounds of the disciples, but there is not a lot of details spelled out in the Bible about some of them, but the message is so good. The characters, and even Jesus, is seen as “real people”..having fun and doing everyday things, but all the while holding on to the true gospel.

I've been chopping onions like that for 57 years. Soup looks good. I think your husband was more than "nibbling" on the soup, not too much chicken left. Maybe a crockpot with a lock would help lol.

I know people give their take so here is mine everything good but add a can of tomato soup for some depth. I made Joan Lunden’s version from when she spent a semester in Mexico City. Corn tortillas cut up the last 1/2 hr.
