Looks delicious Leslie but those are more like Burritos which are big & made with flour tortillas. Enchiladas are smaller & made with corn tortillas. I'm sure they were delicious anyway! ❤ BTW...my daddy was a professional chef whom specialized in Mexican food & owned his own restaurant for many years! Have a blessed Mother's Day!

Great video. If you shop at Aldi, try the refried beans from there. I find them to have a creamier consistency than the other brands.

That looks amazing and I’m def going to make it! I make a mean chicken enchilada dish just like that with chicken. I use pepper jack cheese and sour cream, onions and salsa in my meat mixture. Then it all gets rolled up into a tortilla. But this looks equally good and I must try with the killer rice! I want to use the enchiladas sauce too. Input cheese on top too. Thanks for sharing that. Leslie, if your tortillas are a little dry, just wrap them in a wet paper towel and heat them in the microwave for about 30 seconds and they soften right up.

Hey... was that your mom's metal measuring cup? I have my mom's, and I remember her using it for as long as long as I can remember. Nice that yours has a wood handle, as mine is all metal, and it get s hot as fire (handle and all) if you put anything hot in it. So many memories of my mom and grandma in the kitchen. Days spent getting ready for a family holiday dinner... and to think, no double ovens (guess that's why roasters were so popular) or dishwashers. After all the time preparing food, they then spent a lot of time cleaning up. Reminds us of how grateful we should be about our modern living.

Girlfriend, those are burritos. Enchiladas are just rolled, covered in sauce and baked. The other day when you made those restaurant taquitos you rolled them in the exact same way. I guess it’s just in the words that’s pretty much the same ingredients.

With my husband being military and meeting people from all over the us I have found that Mexican food is crazy different everywhere you go. Hers is not what I would call enchiladas. I would call those smothered burritos. But they look good and I have seen way worse 🤣😂
