Your comments on the cut of meat used is spot on. Flank, skirt, flap, all the "traditional" fajita cuts were favored back when they were not as desirable and therefore cheaper cuts. Times and tastes have changed. As you point out, just use whatever you can find that fits the budget. Good job again.

I've had a decades-long love affair with fajitas ever since I tried my first one at Ninfa's in Houston in '88. When done properly, they are easily a top 3 Tex-Mex dish. And yours, sir, we're done properly! I'd even eat one with just that veggie array, even though I'm a certified carnivore. Thanks for the tips too.

Even colder today. Low 20 high teens. This morning was 17. That recipe will work perfectly with shrimp. That crust will build in those as well. Thats the difference maker.

I grew up in Texas and Oklahoma. I usually judge any Mexican Restaurant on the strength of their Fajitas. I gotta say, this looked amazing, and the Rib Eye turned out perfect. I like the fact that you added the Tomatoes to your Veggie Mix. Looked great!

Love this video! If you have not tried the Mama Lupe low carb tortilla, then you need to give them a shot. I prefer them over any tortilla. They remind me of the Chipotle tortillas. $3 a pack at Sam's Club.

Fajitas are a crowd pleaser but the chopped cheese was great. I mean if you haven’t net had the chopped cheese then hands down use this as an excuse to go for it. Plus worse case scenario you could make burgers.

Now you got me on the spot. I honestly do not have a recipe. It's horrible i know. If you use a packet of fajita seasoning that will help control the spices for you. Then you can add about 1/2 cup olive oil, juice of one whole lime, about 2 or 3 tablespoons of minced garlic. Then add the packet of seasoning. That should be pretty dang close. Thanks Terry

I added lime to the marinade and squeezed fresh lime over the finished product before taking a bite. As dar as the jalapeños i like em but sometimes just a to hot.

Simmering acidic foods in cast iron for a long time eats the seasoning. Did you experience degradation on your cast iron pan with the lime juice?

NO....I honestly have to disagree with comment as well. IF a cast iron is seasoned properly you can do it not problem as long as you know how to clean and reseason. I stand by that because I just posted a video on washing cast iron with soap...yes soap..I think a lot of these ideas are passed down from a long time ago and have never changed with technology...oils are better vs animal fats for seasoning...cast iron is made different today than 100 years ago and the knowledge passed from one person to another can more quickly be transmitted in todays world. Do not be scared to cook on these they can handle it..

No I really don't experience rust. The spots are the natural flow of seasoning coming off and on. I addressed this exact point in a video that I had posted a couple of months ago. Its titled How to reseason your flat top grill.

I wish. When we buy our ribeyes we usually get a great deal. Buy whole and have the butcher cut them for us I think in last couple of years that the popularity with odd cuts have raised the price by being highly recommended. When I pay 13.49 for skirt or 9.79 for flank you know its all messed up. What price are you paying around your area.

Fajitas are usually made with skirt or flank steak, in Mexico with skirt steak or arrachera. So it's not really correct to say it's a cut of meat, it is about the preparation too, but you're right that it's usually made with a particular cut of meat.

I have to 100 percent disagree. Fajitas are a preparation method. Fajitas are NOT a cut of meat. Fajitas are made out what meat they have available. Each area in Mexico will have a different meat option based on local goods. Traditionally it is used with Flank or Skirt, but any meat will do. This is totally a preparation method. Ribeyes are a cut of meat that has been utilized in the fajita preparation method.
