Spring will be here before we know it, so it’s time to jumpstart the compost building operation. Ben is building a huge chicken-fueled compost pile use dry and dead stuff we have around the farm.

It certainly can find your broken smile and fix it too 👍. 😊. When Meg talks about what she’s cooking, or gardening , shes just a blessing and knows not all her friends are young and learning but seasoned in the kitchen and garden - there’s some that act like they’re ‘teaching’ and it’s actually quite funny but I rather the down to earth folks - daily living much the same as us all. Up, family, chores, meal prep, house keeping etc etc. I want megs cinnamon bun recipe and it’s a secret,, but they look SO GOOD. She’s just the best cook on you tube 👍♥️

Compliment to Buggy’s mom and dad, she gets to grow up wise, smart, intuitive, and knowing how to live and life with so much knowledge about life. It’s truly one of the best gifts parents can give to there kids, I know from experience, and it all has served me well, good job !

I second the idea of a Meg cookbook. She always explains and makes it look so easy, but I need written words and pictures to accomplish jobs. I bought a steam canner after watching her. Game changer!

Running a homestead is no walk in the park! Ben, you and your boys work so hard day-in and day-out to keep everything running smoothly and Meg is in the homestead kitchen pumping out all the necessities for great sustenance for the family!! I received a very large skillet as a wedding gift. I couldn't even imagine cooking so much food that I would need to use that skillet and it hardly got used for the first 5-10 years of our marriage. Now, three kids later, its the pot I use virtually every time I cook a meal.

Ben... I THANK YOU for your general education in farming... especially with composting, fertilizing and the steps you need to take to get there... Your boys are sure going to be all around handy in so many ways... just like their mom and dad. I sometimes have to replay what you say, to keep it all straight. And that Millie, my goodness, she loves to slip in, steal your thunder and hustle on out... And then you have Buggy, who is just icing on the cake... She makes me smile... and remember when my young ones were little... Thank You!

Twin boys processing deer! I'm so glad your pig butchering classes went so well. Making compost again. Wow, you make your own bone powder too. Calcium to treat blossom end rot on the tomatoes? Nice, lift out spent hay from the pig pen with the tractor. Fresh cow pies. Nice to see Corbin and Brett help get them. Nice of you to help the neighbors. That compost pile looks good. More rolls made by Meg! Scrapple too! Yum, pulled pork rolls! I hope you guys can deal with all the leftover things from all the pig butchering without too much hassle. I grew up on the Eastern Shore of MD and scrapple is a big thing there. Very peppery and so good in a sandwich. Scrapple egg and cheese and scrapple with grape jelly on a sandwich...yum yum

I grew up pretty much on the Mason/Dixon line between PA and MD - really close to Amish country. Scrapple was a staple. Now that we live in VA, my oldest daughter wouldn't touch the "stuff" until her husband introduced her to homemade scrapple. Now even she's a convert. ;)

I'd love to try scrapple sometime. I saw a video the other day that featured Muddy Pond sorghum. One of the owners of Muddy Pond Sorghum (located in TN) was eating fried scrapple and he added a drizzle of sorghum over top. He kept talking about how delicious it was and I was wishing I could try it! I did buy some of the sorghum they sell from their store and it is soooo delicious on toast or biscuits!!! Meg's pulled pork on her homemade buns looks delicious!!!!

Your house looks like mine does most days. Man outside working and visiting with friends and woman inside canning, preparing and cooking meals. Yesterday we bartered things we had for beef raised by a friend. It’s clean meat, no funny stuff. This sort of thing happens quite a bit. It’s so good to have farming friends!

I have such a hard time not preserving everything lol. I would probably try to boil down the stock to a concentrate so I could can it that way and take up less space while still saving it all. Oooooo or use it to soak the chicken feed. I bet they would love that.

David here. One of the most consistent things my wife and I find anytime we tune into your channel is that you are so real. Not merely spouting the “use it up make do or do without” until you can figure out a new way to do it Easy thing to say but hard to define. Your honesty about your successes and failures and your passion in your pursuits coupled with the reality of what you’re capable of doing and what your priorities (I’ll get back to that but the priority is….) are are a consistent weathervane of exactly what real homesteading is all about. Understand please that this is coming from a couple who have done a lot of been there and done that (or not) in our journeys of 70 and 72 years. Keep on keeping on and make certain that the soil you leave for your family is always rich and deep. Oh and hug the kids and tell bug we love her. Keep those feet firmly planted. Blessings.

I used to live in a city that had a strong Czech immigrant population. The stores in their community would make a lunch meat out of ears and snouts. I believe it was called Jeternice. I'm sure the spell is off but it was good, so good. It was always said when I was growing up that the pork packing plants used everything but the squeal.

We use all of our extra stock and pour it over our barrels of spent barley and it basically hits all of the needs of the poultry...great egg booster for free 👍

I have been that tractorless neighbor in the past. Always appreciated the generosity of my tractored neighbor. Regarding scrapple, a former neighbor (Pennsylvania Dutch background) taught me to make scrapple using buckwheat flour in addition to cornmeal. Makes a positive difference in taste and texture.

Gosh, see, my husband got a deer, and we made bone broth! And just this week, after a good rain, we burned brush. I could have burned those bones! Thanks for the knowledge! I'll see we do it next time!

Add a little flour into that broth along with the cornmeal, and the taste will be a lot less "cornmealy". I always use 1 part flour to 3 parts cornmeal.

Speaking of freezer camp pigs and grinding - I assume you make sausage out of cuts. Have you made a video of turning hog cuts into sausage? something which could be duplicated with grocery store or butcher wrapped pork

I'm glad you don't have a rooster anymore. Your hens look sooo much better now. I have never seen the hens raising chicks so a rooster is not needed and noisy as heck.

Scrapple, egg (your choice fried or scrambled, I prefer scrambled) and cheese (American or mild cheddar) on a soft Kaiser roll. Slice the scrapple about 3/8" thick, fry it lightly, butter the sliced roll (or toast), stack it up and enjoy!

Our scrapple has a mix of wheat flour, Buckwheat flour and cornmeal. We also eat it just sliced cold with out frying. This would be more of a Pennslyvania German method.
