What does the “next step” mean? What do we put in there ?

That is an out of the box field from Zoho and you can define how/if you want to use it. I have not seen many clients use it but I would guess it is helpful if you want to keep track of what your next step is to move the deal forward. If you do not want to use it, you can remove it from the layout.
