Balcones puts out some interesting stuff. I have a rye pick from them that is one of the darkest whiskey I own, super chocolate and coffee on the nose and palate, one of the most interesting rye's I've ever had and drinks super soft at 130+ proof.

Wow, from your notes I could swear you were describing Westward CS Pinot Noir finish. I have a store pick that is literally chocolate covered raspberries. I also love their regular CS and Stout finish. Check em out if you haven't. Cheers and nice guessing!

Basically everything out of Balcones is utterly phenomenal. They're one of my top 2 distilleries from TX, top 5 US. The Cataleja is a chocolate / coffee bomb, no doubt. Another great take on their malt is their Pilgramage release (Saturnes finished), which is much more apricot creme. Can't ever go wrong with Balcones.

Perhaps American Malt whiskey needs to be explored more, hate the "single malt" category because all they want to do is just be scotch but made in the US. For example, 'single' should only refer to a single grain. And malting is a process. So Old Portrero should exist as a Single malt. I have a Balcones High Rye Bourbon that is incredible, unfortunately they seem to have stopped laying down new make in new oak. (True Blue and Baby Blue are just aged is used oak)
