I feel like Theo is eating what he THINKS a vegan should eat (tofu, quinoa), but not what HAPPENS to be Vegan. Just eat whatever you want Theo, as long as it is vegan! Oreos are vegan! Fries are vegan!

Vegan can easily be both HEALTHY and YUMMY. - vegan mac and cheese (using carrots and potatoes) - chill, burritos, and tacos - oven baked onion rings, wedges or cauliflower Buffalo wings - lentil spag bol - cheese-less pizza - black bean mushroom burgers

To add some flavor to your dishes add some hummus or tahini or smashed avocado. Have a pantry of seasonings: nutritional yeast, coconut aminos, braggs liquid aminos, garlic powder, cumin, chipotle, and whatever you fancy !

On a lighter note... my fav Vegan dish (legit vegan not faker food). Is fried Curry Tofu and Onions with brown rice. mix the rice with the tofu and curry and eat it in a nice bowl or buy wraps and make a bunch of curry wraps that are awesome even days later cold.

Best creamer is Silk brand, vanilla creamer $2/pint Best vegan meat (taste and texture very close to meat) any Gardien brand (burger patties, chicken tenders, scallopini chicken, fish filet, meatballs, crab cake) $4-5 per package. Best cheese to eat cold is Follow Your Heart in Gouda style and Provolone style. $4-5 per package Best cheese for burgers is Daiya brand in cheddar style slices. $4-5 Best cheese for pizza (order pizza Togo or delivery with no cheese, then add your own at home) is Daiya shreds in Mozzarella style $4-5 Daisy's block cheeses are pretty good, too (better than the shreds). Best ice cream is So Delicious (only the cashew based ones that are super creamy) $4-5 per pint. Ben & Jerry's make non-dairy, vegan ice creams but not very creamy, although they add loads of toppings! Best milk for cereal, drinking and baking is Almond Breeze in original flavor (tastes closest to cow's milk) $3/carton. The vegan stigma is real, and it sucks. I don't have much advice to deal with that, except be strong. Just stand your ground, even if in silent protest. I guess one great thing about being vegan is the acceptance of the fact that what you do as an individual does in fact impact the planet, your health, and all other animals (including humans). So, keep in mind, that you are powerful, and you can bring about change. People will always resist change initially, even if it is in their benefit, but be consistent, persistent, and persevere. As far as quinoa goes, it doesn't even really need to be cooked. I always make it in a 'one pot' style, in which I throw it in last minute, turn it off the heat, and cover it for a minute or so. Coffee: Black is where it's at. You can always just experiment. Most vegans have a non-dairy preference. I like rice milk, and find that it doesn't separate in hot beverages and coagulate in the way that soy does, but I prefer black with a splash of almond syrup. Listen to your conscience, you ARE doing the right thing. You got this! Oh AND I'm not into slaughterhouse footage, but learning about what happens, and the huge environmental consequences will help you a lot in the times of extreme social pressure, and help you appeal to whomever is trying to convince you to do otherwise.

For a main meal maybe try lasagna? You can use tofu or nuts to make a creamy ricotta-like sauce instead of cheese and then basically add whatever else you want, it usually always comes out good 😊

My go-to for making coffee is using oat milk, coconut sugar, and tea masala. Oat milk is very creamy on its own and the coconut sugar is rich and unrefined, so it has that extra flavor that conventional brown sugar doesnt have. Conventional brown sugar is really just white sugar mixed with molasses to control the color on a large scale.

Coffee: 1) use vanilla almond milk (Califa brand is amazing) and espresso for a latte, 2) use any store bought non-dairy vegan creamer and coffee, or 3) check out Edgy Veg's homemade coffee creamer.

You are doing well, Theo. You are making a great effort. As for being put off by soy milk in your coffee, try Ripple milk. It's made from yellow peas(doesn't taste anything like peas) and to me tastes closes to cow's milk. You can get it at most Shop Rite, Whole Foods and Target. The Ripple chocolate milk is off the chain but has too much sugar for me to drink regularly.

I LOVE Ripple! The vanilla is amazing - I was stunned. It really freaked me out when I first tried it... I kept re-reading the label because I was scared there was dairy in it. I couldn't believe how good it was! My daughter uses the regular to make mashed potatoes and she swears it's the first time ever that they taste like when she was a kid. No "nutty" undertones or odd aftertaste. I haven't tried that yet, but I'm going to. She also loves the chocolate. I like my chocolate almond milk better though. I love the options we have now!😊

The silk creamer is probably your best bet. I now drink my coffee black because I couldn't get on board long term with any non dairy creamers. I agree with you that the coffee creamers are not as good as dairy. But the change is worth it! I agree with the others who are saying to eat more carb heavy foods. Bread, pasta will help

There are a ton of great, easy-to-make vegan main dishes out there! A lot of food from other countries is mostly vegan or easily veganized, so I'd start there. I love Mexican food and make burritos, tacos, and "nacho bowls" (put all nacho topping in a bowl: beans, avocado, tomatoes, cilantro, etc., then eat with tortilla chips as you would a chip dip) all the time. Indian-style curries are also great (get a pre-made sauce, simmer some chickpeas in it, serve with rice), East Asian-style stir-fry (tofu with veggies, serve with rice) or curry, Mediterranean foods like hummus, veggie stuffed grape leaves/cabbage, etc. Google is your friend! It is also good to remember that you don't have to prepare each meal fresh. Batch-cook for a few portions at a time; it looks like you already do this for grams so just use the same philosophy for your food, too. Lastly, a lot of new vegans have difficulty getting enough calories into their meals. It can definitely be tricky when you're still trying to figure everything out, so make sure you are including vegan fats and proteins, especially since you are very active as a bike messenger. I saw you are taking granola bars with you to work, and that sort of snacking is a great way to make sure your body has the caloric fuel it needs. You're going a great job so far, keep it up!

TIP! For your coffee or tea, alwayssss use soy/coconut/almond creamer, its thicker than the usual non dairy milks that tend to be a bit watery! Hope this helps!

Wow!! This is so relatable and you seem like a really cool guy. I am a meat eater but I've always thought eventually I'd become a vegetarian because of the 'cognitive dissonance' sort of thing you described. I don't WANT to think about it all because then I'd truly have to change this huge thing in my life. Yet the thoughts about the animals linger... I love food! First of all, Cheers to you, Theo, good sir. Soy milk in coffee. Blech. Try almond milk. Oat milk is my new favorite. It's got a little sweetness, but it doesn't flavor the coffee. Some people swear by Trader Joe's coconut creamer. I'm not a fan, but you might like it. Also, wait for Amazon Prime Day (July 11) and snag yourself an Instant Pot. Beans from dry to cooked in less than an hour, and no soaking. The Instant Pot really helped me stay vegan, as I like good food but am a lazy cook.

It's pretty much impossible to mimic half & half in coffee, unless you get a flavored creamer. The closest I've come is a mixture of Wildwood soy creamer mixed with Silk unsweetened cashew milk. It's close, and it tastes okay, but truthfully nobody has achieved the perfect neutral creaminess of dairy cream. I think someday they will, and it'll be with a mixture of different nut and plant milks.

If you don't mind a chemical shitstorm, get Mocha Mix for your coffee. It's my one allowance of crap food. I also love using Ripple Milk. It will take your palate awhile to adjust to dairy alt yogurts and cheeses. My go to meal is broccoli, potatoes, hemp seeds, walnuts, balsamic dressing, vegan butter, salt, pepper, coconut bacon. I make a huge bowl- like a potato salad. It's yummy and filling.

To Theo for help with soy drinks!! I def recommend incorporating soy into new experiences first. You'll love it so much more when it doesn't compete with your own food nostalgia. In Australia, I do this by going to places like T2. Any store with a massive range of loose leaf teas and herbal tisanes will work, this one has a hot and cold taste test area for customers.. They usually have at least one milky suggestion on the bar, and it's usually soy or vanilla soy which really helps me because I have nothing to compare that taste to.. it doesn't clash with my expectations of how it should taste, cause its a brand new experience. Then maybe once you've had soy in those new drinks for a while, you could possibly try going back and putting it in your old favourite drinks when its flavour doesn't compete with your preferences :)

Try coffee with oat milk! Also keep in mind that there are a lot of varieties of plant milks to try. They will taste different than dairy milk, but they can be just as good.

Try the creamers instead of milk from Trader Joe's. It much, much better. I also recommend looking at some recipes for ideas for main dishes. My favorites are Chloe, vegan richa, hot for food, and Isa. Isa also has a restaurant in Brooklyn called modern love if you are ever able to out and splurge on a meal. Keep up the good work Theo.

There is one way I sometimes cook artichoke, is by boiling them. First you chop like 2 cloves of garlic saute them in olive oil, add in white wine and then add in water, salt to your taste. add in the artichoke and cook it until it gets a soft. AS for the white wine there are some that vegan friendly. (:

Soy creamer from trader joes (small blue carton) is actually so good, it's the best one i've had for how thick it is. Of course alone it just tastes like soy but in coffee it tastes like it has half and half.

Theo, try Silk soy creamer. My two favorites are the original and the hazelnut. It's really sweet though so try with just a little bit at first. As for meals, if it's difficult try looking at some "What I eat in a day" videos, which are usually very healthy and also very delicious looking meals.

quinoa is my least fav thing to eat. It's tasteless and looks like it's got worms after it's cooked. I ended up adding so much salt to it that it wasn't healthy anymore. My perfect Coffee: Maple syrup and almond milk. dutch processed cocoa powder. If you mix equal amounts (I use 1/2 a tablespoon) of maple syrup and the cocoa powder together into a paste first, then you can add the coffee and unsweetened almond milk on top of that. The reason I use unsweetened almond milk is so that I have control of what sweetener I use.

Good trying! You could eat "dinner" type savory foods when you wake up like food made from previous night, pizza, wraps or make a tofu scramble which is really yummy with roasted potatoes on the side, pasta dishes with beans veggies, sesame noodles. I make a delicious coconut Thai green curry with tofu and veggies with either brown or jasmine rice. Love artichokes! can't help much with the coffee as I drink it mostly black no cream no sugar. There are also great alternatives like Gardein beef less burgers which I think taste really good with tomatoes, vegan cheese, Chipotle vegan mayo. There are also the Mandarin orange things (don't know what they are termed, guess in place of chicken) also by Gardein. They are really yummy with some veggies stir fried and rice or noodles. I make tabouli which is delicious and great for summer as its refreshing right from fridge. I also love miso soup with veggies, tofu, udon or ramen noodles when i wake up in cold months. Have fun. If you want a vegan meal that doesn't feel like a side dish, make pasta e fagioli. It is so good and so easy. I use the recipe from the food wishes youtube channel and the only changes I make are to use vegan sausage and vegetable broth. This is a favorite dish of my non-vegan family.

try the so delicious creamers, they might be by silk brand where you are, realllly nice. also holy hell thats some clean eating there, look at hotforfood or edgyveg for some REAL vegab comfort food

I used to love strong brewed black tea with full fat cream. When I went vegan, I couldn't find anything that even came close so I gave up the tea :).

Yo Theo go try out some vegan meat substitues like Gardein, beyond meat, and Boca. They'll help with the cravings. And try some vegan ice cream and cheese substitues. Just cuz they're so yummy. Treeline cheese tastes exactly like real cheese, but it's expensive.

Check out Dr. McDougall's Starch Solution and eat more potatoes, pasta, bread, cereals, rice, beans and lentils. PS: I agree on the coffee, that's the worst thing about being vegan, haha. Try oat milk.
