Red velvet cake became popular in the US during the Great Depression. During that time, families were using less food colorings and extracts. While the savings was good news for penny-pinchers, it was not-so-great news for the Adams Extract company. The company came up with the Adams Red Velvet Cake recipe, a concoction that used red food coloring and butter extract instead of the traditional ingredients. Before food coloring become the popular way to make the cake scarlet, the hue was much more subtle and was caused by the way vinegar, cocoa, and buttermilk reacted together. The “velvet” comes not from the color of crushed velvet, but from the smooth texture of fine cake crumb. Their ploy worked, it was a hit with households across the country, and the fact that the recipe was offered on free recipe cards at grocery stores everywhere didn’t hurt either!

Here's a cool Panera fact: Every location of Panera Bread whether in the US or Canada is called Panera Bread, right? NOPE! Not in the Greater St. Louis area! There, they're called the Saint Louis Bread Company. This is because they were actually founded in St. Louis in 1987. When Au Bon Pain bought them in 1997 (though JAB Holding has owned Panera since 2021), they were the ones who changed the name to Panera which comes from the Latin word for breadbasket, panarium. However to honor its roots, the St. Louis locations still have the original name. And it's not an American mall experience without being bombarded by the smell of Auntie Anne's and Cinnabon! Auntie Anne's pretzels are authentically Pennsylvanian! Auntie Anne's refer to Anne Beiler, who was an aunt to 30 nieces and nephews in a Mennonite family. She didn't have the idea for a business until she was already married to a man by the name of Jonas Beiler. It was his dream to own a family counseling center, and she made and sold pretzels to make his dream a reality. In 1988, the first soft pretzels were made and sold thanks to the equipment that Anne had at home already, and that's how she got her start in Downingtown, PA. However, there was one more piece to the puzzle. While no additional equipment was needed, Anne made a mistake one day and ordered incorrect ingredients and, upon trying to determine how to make her soon-to-be-famous pretzels, Jonas suggested some alternatives. These 'secret' ingredients are what gave the pretzels their signature flavor and texture, making what could have been a disaster something that was a genuine turning point.

Ah yes, having Starbucks while enjoying the views of the Interstate...a truly American experience. The real reason to visit the States! So bundt cake originates from Minneapolis! The idea of its shape however was inspired by Gugelhupf which is a German brioche-like ring-shaped cake, and in northern Germany, it's called Bundkuchen. The story with bundt cake goes that while Gugelhupf is German, the pan for a bundt cake is very much an American innovation. Bundt pans were invented by H. David Dalquist in 1950. Dalquist was the owner of Minnesota's Nordic Ware company, and he cast the pan for the Minneapolis-based Hadassah Society (a group for Jewish women), which wanted to recreate traditional Gugelhupf. Originally, he called his invention a bund pan, for the German word that translates to "bond" or "alliance." Why did he add the T? No one knows! Some say it was for trademarking purposes. Demand for the distinctly shaped aluminum cakes grew slowly after that initial order, but it wasn't until 1966 when production really blew up thanks to a Bundt cake placing second in the 17th annual Pillsbury Bake-Off.

You have to come to Canada and try Tim Horton's. They have better doughnuts than Krispy Kreme. Tim Horton's is Canada's coffee and doughnut place. They also have a number of meals, sandwiches and now they even have pizza. Tim Horton's is Canada's number 1 coffee shop. There is a Tim Horton's around every corner. 8 out of every 10 coffees sold in Canada are sold at Tim Horton's. Don't forget to order a Double Double when you are there. A Double Double in Canada is a coffee with 2 creams and 2 sugars. All you hear at the counter is people asking Can I have a medium double double or a large double double? They also have everything from Lattes to Espressos, Cappuccino's and Ice Capps. The Ice Calls are great. Also try Laura Secord ice cream. It is amazing.

Here in the States, folks have gone crazy with putting so much icing on cookies, cupcakes, and cakes. It takes away from the taste of the cakes and cookies.
