The Pasta Queen has revolutionized pasta cooking in my home. I thought I knew a lot after I lived in Italy for a couple years, and in my defense I knew more than the average American; but I've learned things by watching her KZbin tutorials that have really elevated my meals in my home. I am grateful and have been taking notes as I watch these videos.

I’m not Italian but I have been cooking pasta water with my tomato sauce and it always turn out so good. Every bite the sauce hug the pasta so well. The basil is better for flavor in the sauce..

So that's why when I used to make make a quick pasta I was too lazy to drain all the water out from spaghetti and by adding the sauce and flqvors and heating up it tasted so much better. Using some of the cooked water adds flavor.

Finally universe brought me to someone who knows what it means to cook with passion and love with each and every single ingredient, and understands the power of even a little ingredient and does not spoil the food with unnecessary overloading of ingredients to it…..someone who understands every little flavour & is capable of appreciating it…..long live the queen 💕✨🌸💜😘……….as an Indian I really struggle with how badly our cuisine is represented by mixing & adding whole lot of unnecessary spices, with unnecessary amount……my soul leaves my body every time when people just make anything but the original recipe…it’s true simple is the best✨👌

I’ve been taught to cut a yellow onion in half, allow it to rest within the San Marzanos as the sauce simmers, and then I remove the onions prior to finish. Good? Ciao bella!

I got some pasta sauce at the store...it tasted super sweet and I went to see if they added sugar.....nope just made with Italian tomatoes, I grow my own san marzano tomatoes.... they're good but don't even come close to the ones grown in Italy.

My entire adult life, I've been assaulted by non-Italians giving me their "recipes" for Italian dishes. Of course, they all think they should open pizza shops. The best was a friend's mother, who put catsup (ugh) and -- oddio! -- Worcestshire sauce in her pasta sauce. I try to be polite, but it's so satisfying to watch you in this video!

@@aris1956 the recipes of the emigrants changed a lot according to the groceries which were on hand. This is true for the US as well as for Northern Europe. For example, pizza in Germany has historically been a nightmare resulting from the lack of ingredients and the local tastes and in many cases still is, because the following generations learned to bake it like that. The meatballs in the pasta in North America were due to the meat being cheaper than in Italy, and the need of proteins for the heavy work in the factories of the 900s on the East coast. As an Italian I've seen horrors in many countries, but sometimes it's hard to keep your traditions or pass them on to the next generation.

Tra l’altro vedere a volte nei ristoranti italiani (e parlo di ristoranti italiani gestiti da italiani, non da tedeschi o libanesi o turchi) quello che scrivono sulle carte dei loro menù, dove leggi ad esempio…. “Carbonara: prosciutto cotto, uova e panna”, fa scuotere un po’ la testa. Praticamente non diversa da quella che fanno molte famiglie tedesche. Magari un tedesco stesso se pensa di andare in un ristorante italiano per mangiare una carbonara originale italiana, alla fine esce dicendo….. ho mangiato una carbonara non diversa da quella che faccio a casa mia.
