I love chicken broth, cabbage, onions, garlic, potatoes, carrots and amino acids with a little shot of worcestershire. You can put nutritional yeast in for thickening if you want to but powdered okra works really well.

Just an FYI for those curious - if you fermented you sauerkraut, be sure to dry under 115F/42C to keep all those good bugs alive!

I've dehydrated a bunch of green cabbage for cabbage soup. We eat a lot of it because it has good flavor and we don't miss the salt, as we do in many other soups & stews. For cutting, I quarter the head of cabbage and remove the stem from each quarter. Then cut the quarter lengthwise in about 3 sections. Then, cut across the sections. Often the result is squares of cabbage about an inch or so wide. When I hit thick stem pieces, I slice them lengthwise to expose more of the interior, which releases more moisture. Like you, I spread as much as I can on each tray. After a couple of hours, I remove the trays, one at a time and look for those clumped pieces you mentioned. After the cabbage dries a bit, they are easier to separate, IMO. That's the time I also spread out the pieces that are too thickly stacked. And, I rotate the trays as I return them to the Excalibur. Top and bottom trays go to the center. And, the trays are rotated front to back in relationship the the fan. So far, works well. Hadn't considered doing purple cabbage. Green is on sale right now for $.69/lb. May pick up some green AND purple to give that combo a try in the dehydrator. Thanks for sharing!

I am new to dehydrating and I am hooked. My favorite so far is cherry tomatoes 🍅. After they are dried I grab a handful and toss them into sauted (charred) chicken tenders cooking in organic avacado oil with onion, garlic, dried celery, organic frozen peas and lots of mushrooms! Delicious. Simply outstanding. I can't state enough how delicious it is. Dried cherry tomatoes have a more pungent, concentrated flavor. I have bell peppers drying now (all but green). After that I will try drying mushrooms. The only thing I will add is that it has taken MUCH longer than the booklet says.

I built a solar dehydrator for this very purpose. I reuse sanitised pickle jars for storage. I made a break bleeder adaptor to pull the air out of the jars once full. I had some potatoes I did this to that were 5 years old. Tasted great!

Thank you for that tip on dehydrating sauerkraut. I make a lot of sauerkraut because I love sauerkraut soup. I use regular cabbage to add to the the smoked bacon and onions and add whatever stock I have, and only use the sauerkraut at the end to help preserve its probiotic value. However, I seem to end up with a lot of jars of sauerkraut in the fridge taking up space. To know that I can dehydrate it and still retain the probiotic properties is a blessing. I also love the sauerkraut in a bun with a grilled sausage. Yum.

Thanks cabbage is a great idea for use in soups and such! BTW, I like your technique of conditioning the final dehydrated product. I set mine on the kitchen counter for 5-7 days. Rolling or shaking them at least once a day, before vacuum sealing. 👍

I swear, those hard, white sections reproduce in the bowl when I’m not looking! I too am not so great at chopping cabbage-I start out strong with pretty strips, then I start rotating the head and getting all flustered and…yeah, it’s not pretty. There are way more of those hard parts than I remember seeing in the bowl. Totally agree with you on the pre-prepped stuff. 😂😂😂

I agree with her dehydrated vegetables. I have three going every day. I don't blanch cabbage,onion, celery, cilantro, parsley, spinach, I do blanch broccoli, cauliflower, potatoes, carrots,sweet potatoes, yam, really find your way to save food and jars. With dehydration I can make powder food how wonderful. If you ask if I like a freeze dry NO WAY I was exited when I could take it back, I couldn't have the space I gave with Dehydrated to that and that way was horrible. I like fruit on the go not air fruit candy fruit . So you will learn to love this you will.

Thank you for this. I am not brave enough to try canning. Dehydration, I can do. I have a gallon jar of tomato peppers stuffed with cabbage. It said to eat 7 to 10 days after opening. IT's storing cabbage in an enclosed container. Cabbage smells. If it smells moldy or musky or bad, then chuck it, but yes, things are going to smell after you open a jar that held those smells in.

Found out that I’m pre diabetic and now I’ll need to fill my prepper pantry with low carb options. Have lots of potatoes (just dried 65 lbs in last month), mixed veggies that have corn, peas, lima beans and carrots which are high carbs. You can do it either way. It tends to be a chewy crunch vs outright hard crunch like a chip but rehydrated will be chewier even unless you blanched it first. We just leave it dried. But it's not for everyone.

If they are over baked, they aren't really going to hold up to dehydrating and rehydrating. You can make potato flakes from them to use in cooking.

I eat 'Crack Slaw' virtually every day on my Keto eating regimen (I am not dieting). I want to dehydrate lean meat and make pemmmican. HOwever, I want to know if the dried cabbage would work fine in the pemmican instead of berries. In short, is there a potential problem with the dried cabbage mixed with beef tallow? I suspect not, but just wondering. Next question, most foods are low in magnesium. Magnesium glycinate is the substitte for magnesium in foods. In it's powder form, do you feel it would be appropriate for spice mixes, soups, pemmican, etc.?

You didn't leave it in too long if it was soft - Did you let it sit for a long time without the machine running? you can rarely over dry anything - it sounds like it wasn't dried enough and started to go bad

Doesn't it lose most of its flavor and c-vitamin soon after being cut? What does it taste like after you take it rehydrated from the bowl? Those cores tossed over the edge of the counter are tasty when fresh. A bit like radish.

You assumed they weren't used. All dehydrated foods will lose VitC when being dried (just as if you cook or can it) - but it retains most everything else. It tastes like cabbage without the crunch.

Can you pressure can cabbage? My husband is wanting some canned but I’ve heard it can’t be canned except sauerkraut! I’m leaning toward drying it. 😂
