Our go-to is anything wrapped in a tortilla -- beans, eggs, potatoes, leftover meat -- you can make a taco out of anything. Put salsa on it and you're good.

I made lentil tacos yesterday. Ita just lentils with taco seasoning in a tortilla. It is a good meat substitute when you don't have meat.

I think the dish that you did with the Treet was probably one that I will definitely try! I absolutely love spam and I have some in my cabinet now! We are still working, our factory is deemed essential. After Christmas I go early to the store for 50% discount on those meat and cheese gift sets and store them for emergencies. I don't believe the meat and cheese are even food since they last forever without refrigeration. 😂

My go to breakfast is oatmeal with almond milk,ground flaxseed and chia seeds and fresh or dried fruit or homemade bread (knead by hand) and a side. For lunches I have plenty variety Thank God but my quickest meals have to be soup, spaghetti or something called pelau (a Trinidadian dish) which is rice mixed with some type of peas sauteed with lots of veggies and fresh herbs and with some sort of meat mixed in. P.S. I have herbs in a kitchen garden which I intend to expand to grow even more and I live upstairs my inlaws and my mom in law loves to cook so we usually get Sunday lunch from her and homemade bread. I also bake bread and dessert called sweetbread so between both households we are eating well during this time.

Very interesting use of available food to make appetizing meals. Well done. I am using Walmart grocery pick up service and also Instacart for Aldi deliveries. However, after a month of this craziness, I’ve pretty much had it. My state has the lowest number of cases per capita, (Minnesota), so I am ready to cautiously visit some stores myself again, following prescribed guidelines. I am over 60 and will be visiting my Costco at 8:00 am tomorrow for the ‘old people’s hour’ of shopping. On Friday, I will go at 8:00 am to Trader Joe’s. We need to start resuming some semblance of normalcy or there will be more people suffering from nervous breakdowns than corona virus. Thanks for sharing your good recipe ideas!

Your creamy chicken noodle soup looks amazing!! Everything looks delicious, you are a great cook! We have been living off of sauce over here 😂 I super-stocked up on all the ingredients for that and have just been making a huge batch with meatballs once a week and splitting it up throughout the week to make different meals. Plus homemade sauce freezes well so we aren’t wasting anything! I will definitely make a deep dish pizza with some, yours looked so yummy!

OMG. My father immigrated from England to Australia as a child. Spam fritters is a lunch food my grandmother often gave me. A frugal meal she also made was pinacalty or taty hash (sp?) Which consisted of sliced potatoes, onion and canned corned beef layered in a casserole dish, sprinkled with powdered gravy and covered with water and cooked in the oven like a casserole. It was very hearty and a favorite of mine.

I eat the core of cabbages and also the stems of kale and other greens too, I think they taste great and has a nice bite raw or when cooked it gets so soft that you cannot distinguish the core from the leaves.

What I love most is your creativity with food. I use the same trick with soup. I rarely eat it the same way twice. I change the flavor by turning it into chili or a casserole. I had anchovies for the first time a few years ago and find them to be such a good addition. The place I had them actually suggested I had them semi-toasted and kinda crumbly. Sprinkled them on a garlic artichoke and spinach pizza - I need to recreate this 🧐

At the beginning of the pandemic we stocked our freezer full of meat and our pantry full of canned goods. So we are still using all that. Today I have hindquarters in the crockpot to make chicken and noodles tonight. Our pantry is still pretty full but our freezer is about a quarter full right.Very soon we will be heading to the grocery store to fill our freezer again. Enjoying this series very much

I’ve been cooking mostly as usual. Shopping once a week. We’re not locked down so tight that we can’t leave the house for food. And our Province has very low numbers of cases and only a few deaths. Cases are declining too. Hopefully we will see things go back to more normal soon!

We had a good week and a half without shopping (which is a long time for our large, health conscious family) so I had to get creative to string out precious resources while keeping nutritional value. I could have definitely benefited from your videos a few weeks ago. I still find them very helpful as we want to conserve resources. Now we are ordering pick up and occasional Instacart. We go through a disinfecting process when the groceries arrive. The pick up option doesn't add too much expense, but Instacart is expensive and would be cost prohibitive for a family unable to work. This has been a great reminder to buy in bulk on sale and keep the pantry and freezer full. Thankfully we had seeds from several years past so my husband got our garden going. We now have fresh lettuce, kale, and chard. If you have never grown those items, you can go from seed to ripe in a month! Tomatoes, squash, cucumbers, peppers, and more should begin ripening in a month or two. Just like you, I find fresh or pantry herbs can make a plain dish taste delicious. We keep rosemary, sage, oregano, chives, mint, and thyme in pots or in our landscaping. They seem to be perennial where we live and require very little maintenance. Another blessing!

I love treet. I make cabbage with treet. I make it with rice I love treet as a mayo sandwich with lettuce and tomatoes. Ramen noodles and treet add eggs onions.

Can you tell us more about the other people in your household? are they adults, do they cook, are there health issue, etc? I've been doing pick-up when possible. Some items aren't listed in the app, I guess you need to go in person to see if it's in stock (looking at you, toilet paper!). I save all leftover veg, beans, rice sides in a freezer bag. When it's full...veggie beef soup! I'm not a big pasta fan, but if there's meat and cheese I'm okay. My comfort food is pasta (usually elbows), ground beef, pepper/onion medley, can of tomato bits, and beef broth (or water and beef bouillon)..topped with cheese of course.

I have been using pantry items and have done Walmart grocery pick (for the first time ever😳) That went well, but sanitizing every item before bringing it across the threshold of my home was absolutely a must for me. Our go to meals involve homemade soups, chili, pastas, casseroles, or stretching a purchase of meats to make 2 or 3 meals from them, ie turning a roasted chicken into 3 different entrees like a carved dinner, a casserole or tacos next and then whatever is left into a soup. :-)

Yummy food 😋👍 We are eating from our pantry and freezer. I wish now back at the beginning of March, that I had picked up extra cabbage. We just had homemade pizza too. I don't think anyone but me would enjoy anchovies. We had diced ham, onion, mushrooms and peppers. My crust was half whole wheat. We are using our pantry staples mostly but for things like milk, eggs, bread, fruits and veggies we use instacart. I opt for no contact delivery, wipe all items with disinfectant, and let fruits and veggies soak in soap and water. No ordering out for dinner.

I did go to the store had too, we need water our tap water smells like bleach. I made a stir fry ground turkey, cabbage, carrots, onions, salt, pepper, garlic, ginger with rice on the side yum. For breakfast I like hot quinoa with salt and sugar with eggs and fruit on the side.

I go out for fresh fruit and veges, and I also try to replace any stock-up foods that I have in my pantry that I have used. So, basically I use about half stocked up food and half fresh. This way I can rotate my stocked up food. I check for other things that may be on a really good sale and get that. I do a lot of soup because I can use lots of veges with less meat. Baked sliced apples with just cinnamon is a favorite. (Red delicious apples so no need to add sugar). We're doing just fine.

I have been making homemade French bread. So I cut a couple of slices then toast it. I then mash an avocado and spread on the toast. I then sprinkle some Trader Joe's Everything But the Bagel seasoning on top. My husband and I love this.

One of our go to Pandemic meals, was a can of vegetable soup drained a bit, and served over toast squares or rice, seasoned with a bit of cayenne pepper and garlic, and accompanied by garlic toast. Basically just bread slices spread with vegetable or olive oil, and sprinkled with garlic powder, pepper, and salt. We had a coup6boxes of microwave popcorn, so we could pop a bag for snacks, and we also liked Graham crackers with peanut butter, dusted with a touch of cinnamon. 🙂💯

If you live in an area that allows you to keep hens, I suggest you get two, maybe three if you use a lot of eggs. I currently have one Golden Comet hen. She produces 28 eggs per month, which is more productive than White Leghorns or Rhode Island Reds. I was taught a method for storing fresh eggs that is cheap, requires no refrigeration and allows me to store them in their shell. I bought a 50 pound bag at Home Depot of hydrated lime that is used in concrete, not the kind of lime used on lawns and gardens. I bought two 2 gallon plastic. buckets and 2 Gamma lids that screw onto the buckets to make opening and closing them very easy. I put my clean fresh egg in a solution of the powdered hydrated lime and tap water. The 2 buckets sit on my counter all year in the kitchen. I put the fresh daily egg in the one on the right. When that bucket gets filled with about 60+ eggs, I switch it to the left position and using a grease pencil or marker write on the lid, "use first" and use those when I need eggs for breakfast, hard boiling or cooking. The water/powder mixture is 1/3 cup hydrated lime powder to 1 quart water. Eventually the lime settles to the bottom of the bucket, just let it be. I have started writing the start and stop dates on the second bucket that gets the daily eggs that are fresh. The eggs must be cleaned of any debris, dirt or poop before going in the solution and washing the egg clean does not diminish how long the egg will keep. The longest I have stored eggs this way is 8 months at room temperature. It is said they will keep up to 2 years. The hydrated lime and water seal the egg and keep the egg fresh, and there is no taste of any sort because of the solution. I kept records my first year in raising 2 hens and found that with the cost of feed and amount of eggs I got even with breeds that dont produce as heavily that it was still cheaper for me to keep hens than to purchase nonorganic eggs at the store. I feed my single hen a diet of laying pellets ( less waste) and fresh kale or spinach from my garden when available. I also feed non treated weeds. Bedding is nontreated grass clippings, fresh when available, and completely dried grass clippings that i store and keep aerated in the summer which are then bagged for use in the winter. They work better than pine shavings, and I can shovel out the small coop area and put all of that right into the garden fall through spring and rototill it in when the ground is dry. One hen produces enough poop to fertilize my entire garden of ten 24"x48" garden boxes and eight 4ft X 4 ft. Garden boxes. I love always having fresh eggs from a source I can trust.

We have mostly an open yard with our neighbors, so the chickens will not work for now. I was thinking of quail for eggs because they are supposedly quiet creatures too. You do need a fenced yard for a few chickens. You can house a few chickens in 40" by 40 " square homemade coop. A 48" square would be better. You can also make a nesting box which can sit on the floor of the coop filled with dry grass. There would need to be a door for the hens to exit and for abt. $5 each, you can buy metal 4 or 5 ft fence posts that have hooks on them and stretch a roll of chicken wire around them to create a chicken run for during the day. I also put one width on top of the length of the run so no owls or hawks can get at them. At night the hens will go back into the coop on their own if the door is left open, and then you shut it to keep mice out. The hens always need an enclosure of either the homemade coop or run so no cats, dogs, skunks or other assorted animals can get at them. Hens are not noisy at all, and there is no odor if their bedding is kept dry. No one in my neighborhood development knows I keep chickens for those reasons. They are so worth having.

One of our favorite pantry meals is butter chickpeas: Dice an onion and fry lightly. When it turns translucent, add 1tsp cumin, 1.5 T. Curry powder, and a bit of cayenne if you want the heat 🙂. Continue cooking, stirring constantly, for 30-60 sec, until spices toast a bit. Deglaze pot with 1/2 c. Stock or boullion. Add 1 14oz. tin tomato sauce, 1 tin chickpeas, a splash of lime juice, and 1/4 fresh cilantro if you have it. Cook over med- low heat, stirring occasionally, until chickpeas have plumped up a bit. Add 1/2 cup coconut milk and 1/4 cup almond butter; stir till incorporated. Serve over rice. I like to add a little garam masala to taste at the end. This recipe is forgiving; the proportion of tomato sauce to creamy ingredients doesn't have to be precise. I've used tahini in place of almond butter for a nut free version with good results. I think evaporated milk should work, though I haven't tried it. We've also made this with chicken thighs in place of chickpeas; you have me wondering how tinned chicken would work.

But using the same recipe, you will need to roll out the dough with a rolling pin if you want to make them really flat like commercial tortillas. The recipe is also written beneath the video.

Here the grocery stores seem to have slowed down on most thingsthere is less empty shelves etc certain things are still out at Costco but most stores have some sort of flour or toilet paper but usually the smaller packages flour and toilet. the larger packages are still being delivered to the grocery stores but they're the first ones. most stores are doing very well keeping social distancing and only allowing so many people into the stores at once and there are arrows on the floor so that you can encourage everyone to go the same kind of direction and not have to accidentally bump into one another. the only stores that really tend to have a line up outside our first thing in the morning at Costco and Superstore and Walmart. the lineup diminishes as the day goes on and buy the evening sometimes you can go into Costco without align up but some of the hot commodities like flour or yeast or toilet paper might be out. We have been relying on Friends picking up groceries when they're going to the store to get stuff for themselves. Last time I was in I store it was a month ago. we are just purchasing stuff to replace the stuff we already have eaten as I have a pantry and freezer of food but I don't want it to do in them down too much just in case we can't get the stuff and my familyreally enjoys fresh produce & dairy products which I have no way of doing here myself here in Canada in the suburbs. Everything that comes in I take a cloth mixed with bleach and water and I wipe things down. anything if I can leave in the bags themselves I put into the garage and let them sit there for three or four days as the virus does not live on materials past 3 or 4 days some things it doesn't live off of more than a few hours

I have a well-stocked pantry and freezer so we are just getting a small amount each week via Instacart (Aldi). We live outside the delivery range but my daughter lives in town. She places an order for me and one for my parents. My order is mostly dairy and produce. The order is delivered to her porch and there is no contact with the delivery person. I pick up our orders and take my parents' to their porch. When I get home I sanitize each item before putting it away and then thoroughly wash my hands. I cooked 38 days in a row and then my husband suggested picking up pizza (curbside/contactless) this past Saturday. When we got home he held the open box, I removed the pizza to plates and we microwaved each one for 45 seconds before eating. We are being very, very careful. Our adult son is working from our guest room as his office since he doesn't have internet. I am a blogger so I work from home anyway. My husband is a regional manager and still going to work but he has his own office so has no close contact with anyone. My son and I aren't going anywhere.
