I tried it! It was delicious and so rich! I used cashews for my cheese since I didn't have macadamias. My hubby is not a raw fooder, but he sure did love this dish!!

I had this dish at our Raw Food restaurant, they did not wilt the spinach. It was good but I can see how wilting makes it better.

OMG thats more oil and calories than I eat in a whole weekend! Beautiful presentation, I watched all your videos years ago when I was totally raw for many years. You are right, there are few who keep it so forever but once you eat raw, you always include a LOT of raw and a small amount of cooked or it feels too heavy, at least for me. But plant based all the way. Even my 3 cats eat veggies, they love avocado, chick peas, steamed corn, peas, string beans, zucchini, and potatoes. I do keep a stick of butter in freezer and run it over the veggies for them. I do this because the kibble portion of their food needs a lot of hydration for the kidneys, so the veggies bring moisture. They look at me eating and say "I'll have whatever you're having"!!! LOL

yes you don't need oil in your tomato part - just dice the regular tomatoes and that's it! Sometimes i add red bell pepper. People use zucchini instead of oil in pesto.

Because the spinach is wilted down, you don't need to serve it straight away. But if you have the time and space, fresher spinach would be nice, yes.

I picked it up as I went along :) It depends on what capacity you want to be a Raw Chef. If you want to run your own thing, I'd suggest getting your work online and sharing your recipes. That's actually a good move if you want to work in a raw food restaurant too - showcase your work.

For the cheese? Depends which one it is. You could replace the water with a plain coconut yoghurt kefir, that would probably work quite nicely.

I've left it for up to 24 hours in that first stage. It won't make a huge difference in terms of making up for the lack of nutritional yeast. If you have light miso, that can be a substitute.
