2 years ago, I was working for McDonald's. At the time, the McRib was kept in a bath of the McRib sauce, which is how it got juicy and also why the sauce was frequently heaped on. I'm not sure if anything has changed since then, but it's likely you're getting rush prepared McRibs.

I worked at McD's when the McRib first came out, back in the 80s or whatever. We used to fry up a bunch of patties and then dunk them in BBQ sauce and let them cook on the steam table, swimming in the sauce and get really tender and saucy. There seems to be a lot of people mentioning that your issues with the McRib this year could be indicative of your location as opposed to the overall quality of the item this year. I would say by the absolutely shameful placement of the McRib on the bun and the dreadful distribution of the sauce and toppings (3 pickles lumped together on one end of the sandwich and a few slivers of onion, all on the front-side ... seriously?) that the employees at your location are barely going through the motions. I will say, however, that your insistence on eating it the way it came and not redistributing the toppings more evenly just proves how much of a maverick you are ... and I'm all for it!

This is how I cook the MiRib at my Mcdonald: 1/The patties come in frozen (of course). Take 4 patties for one big grill (We have separate grills for regular and 1/4 patties, big is for 1/4), make sure that the ribs on the patties face down on the grill, make sure the setting is mcRibs, slap the cook button and it will cook for around 160 seconds. 2/When the meat is cooked, put them in a tray filled with BBQ sauce (the same type of trays that we put the regular meat in). I usually spend 3-4 hours in the kitchen, and I have never seen them change the BBQ sauce. So put the patties in, make sure they are submerged in sauce, and put them in the standard food heater for all types of patties 3/When someone ordered a McRib, before we take the patty out from the BBQ tray, we make sure to soak them through one again with the grabbing tool and put the meat on the bun. 4/In rush hour, a McRib can be cooked and soaked in BBQ sauce for less than 2 minutes and get sold, all that time there is no way the BBQ sauce gets inside the meat, the time, and temperature of the heating tray is simply not enough. Edit: My opinion is that the McRib this time around are just barely cooked patties with a thin amount of BBQ sauce. I kina cheat because when I eat the McRib, I cook them myself and make sure there are lots of sauce. I hope this help :)

@maxtruong1872 жыл бұрын
@@hugon6717 I feel like the quality of the patties is worse this time around. Also, McDonald itself doesn't give as much BBQ sauce to the franchise owner compare to the last time. I heard that from one of the lady that works till midnight. Not sure about other locations though.

That's how we made them when I worked for McDonald's. I recently saw a TikTok where they took the unsauced meat and "dipped" it in a tray slightly filled (less than 1/4) with sauce. I was shocked...the meat needs to soak in sauce? 😡😅
@Edited62 жыл бұрын
Do they come pre-cooked with grill marks already or does step one actually contribute to any charring? Assuming the former, I don't get why you wouldn't combine steps 1 and 2 and just reheat the patties in simmering sauce. Would facilitate even coverage of sauce and maybe even rehydrate them a bit, no?
@juamineta47892 жыл бұрын
BBQ "sauce" is not supposed to penetrate the surface of meat, it is merely an accoutrement to complement its flavor. If you want the flavor of your meat to be altered altogether, what you're thinking of is "brine" or "marinade." That said, I like my McRibs slathered in as much sauce as possible.

I worked at McDonald's in the early 80's when this item first came out. Back then, the McRibs were braised in the sauce continually, which yielded a rib that was juicy, sauce-laden, and delicious. Stewing the the sauce for a length of time allowed the sauce to permeate the patty, yielding full flavor and toothsome lusciousness. Obviously, McDonald's no long braises the meat. Method matters.

Having worked in fast food, they might have changed their procedures when it comes to the McRib. My impression has been that the cooked rib patty was dipped into a heated container of sauce, then placed on the bun. Looking at what you showed, this looks like they passed it through their patty cooker (90% of fast food no longer uses an actual flat-top grill for most of their food) and used a squirt bottle to apply the sauce, the same way they do ketchup and mustard.

Now, this is not a knock on you, maybe I missing something here, this may be your YT slice of the pie (pardon the pun), so don't hate on me. From comments and the fact you are still making these reviews I'm prone to believe that may be the case. However...as a 61 year old guy who rarely eats fast food, it pains me to see you concentrate on these items. Now, again, you are rocking what you do here. I like the delivery, the passion and your determination in this endeavor. But I have to make a suggestion, or give some advice here. Remember this: Advice from an Old Coot like me is free. It's worth what you paid for it....but here goes. Seek out some local Mom & Pop restaurants in your area, try and review their takes on similar items for us, some real BBQ places maybe or some Mexican venues. Real ones, not chain ones, mix those in perhaps. See what happens. Fast food is by design, well, just that. Not very wholesome, not very good and not very...appealing. Seek out some local Greek or Vietnamese places, some good Italian or Japanese food to work in. You may be surprised at the interest. Good luck, I'll keep checking in. Let me know what you think of this idea, good or bad. And, whatever you decide to do, just keep doing it. I hope this makes sense to you.

Your advice comes from a good place indeed, but for most of his audience it wont help much. For example, I live in Argentina and I watch these kind of videos because I enjoy the review, but also because I would like to try those items that are good. Being items from big fast food chains, it is possible to try them on multiple cities or other countries, but if it were momma & papa's restaurants, it would only appeal to a local audience only.

It's probably not a company wide mandate but just that store trying to cut corners. McRibs always took longer to cook and sold fast, so I used to put too many parties in the sauce at one time. That would result in a bad sauce distribution sometimes. Other times I would just take a dry patty and quickly dip it into hot BBQ sauce instead of letting it marinate like it's supposed to, and that would lead to lighter sauce.

This feels like McDonalds all over. Their wraps (were) amazing, their chicken legends (were) far more value for your money then today. They seem to get people in with a product and then gradually reduce either the size or the quality, slowly in hopes people will not notice and buy the item with the thoughts of "I know how good this item is" like a food item nostalgia. Until a new item arrives and it's the same over again.

As a huge mcrib fan in the early 2000s when it used to be a permanent on the menu was the best version of the mcrib. When they decided to discontinue it and became a seasonal option only for the first couple years the mcrib quality was still great. Then they discontinued it as a seasonal option. When they decided to bring it back several years ago the meat had changed completely. I went from it being my fave meal I would order every time to now avoiding because its absolutely disgusting now compared to its glory days. I think people like me that absolutely loved the ones made 16yrs ago hope one day that old version will come back hence why people get asked to review it. So I've had two mcribs so far from the same location. Normally this location is extremely busy at most hours, however they close at 8pm so they may be really shortstaffed. I've had a few mcribs in the past and I never liked them, so I decided to try it again this year. The first time, everything was good except the patty itself tasted pretty bad, which is probably why the lack of sauce was so apparent for Reviewbrah. The mcrib NEEDS lots of sauce, pickles, and onions in each bite to mask that terrible patty taste. Otherwise that was the most I've ever liked a mcrib. The second time I got one this year the pickle was missing, and there wasn't enough sauce, so pretty terrible overall. I usually have to pick off half the onions though, so I was getting a lot of that nasty patty flavor in each bite. I have IBS and onions are a trigger if I don't eat them very sparingly even though I love onions.
