Wow, did that really mix and knead in the two minutes? I'm just wondering if I over-knead dough. I normally do bread or pizza dough for about 10 minutes

Hi Bec Yes it really did! You can test the dough by seeing how shiny and cohesive it is. The gluten has been activated properly and no more kneading is necessary. I put this down to the shap of the bowl and how much room the blade takes up in the base. It is a very aggressive knead! I hope you enjoy the Thermomix Julie
