The reason thar Gary can get to know a lot of Thai food and also know the way to cook, ingredients because he can speak quite good Thai. Many local Thai people can't understand or speak English very well. But when Gary start to speak Thai to them made them more open and willing to tell him all the details. Yes, I agree completely. Gary has a very respectful approach, which is shown in the fact that he is mastering the language. I am always surprised by farang who have been living in Thailand for years, making videos about Thailand, but haven’t even bothered learning the language. I know it isn’t an easy language, but if you have lived there for years surely you should be able to speak basic Thai.

Yet another reason to visit Thonburi! Those chickens looked great and they were so plump compared to the usual scrawny gai baan you often get at gai yang stalls. I think it’s amazing how young people within these restaurant and food stall families are keen to take on the responsibility and keep the business and tradition going into the future.

I like that they were able to transform the garlic and pepper stuffing into a topping when it was time to serve that chicken. Don't think it could have been possible with soggy breadcrumbs.

Thai chilli paste sometime put "Mangda" to get a unique smell. Mangda(na) is water beetle. But don't confuse with another Mangda(talay) which is horseshoe crab.

Man o man! Another awesome vid, Gary! I didn't realize the chickens used there were so "meaty". Garlic and pepper .. also two of my all time favorites .. and two ingredients that go in just about any dinner dish I make! And your new coffee series sounds cool. I know a little bit about coffee, but def no expert, so will be interesting and fun to learn. on 6:37 about "mang-da" I think she use "ma-lang-da" or giant water bug in nam-jim. In Thai food culture we have 2 similar words "mang-da" mean horseshoe crab which we use only its egg like in "yum-kai-mang-da" meaning horseshoe crab's egg spicy salad and second one is "ma-lang-da" or "ma-lang-da-na" mean giant water bug which we use in nam-jim or chili paste. These two have so much distinguish in using so many Thai people will just call both "mang-da" for easy word but we differentiate the meaning base on what food we are talking about.

Two hospitals two prices. The food is very good near both hospitals. First hospital is a public hospital. Second hospital is a private hospital. In the private hospital there are a few very good restaurants. I know both of them.

Went this morning to try .I love a roast chicken with bread stuffing . This is not the same but the garlic , pepper stuffing in the roast chicken is mind blowing. Really a different dimension. As you say if you don’t like garlic 🧄 maybe Not for you 😬

Cor blimey guvna! When you mentioned you'd walked down the road to "get some B roll" I was like "nobody here cares if you bought bog roll, duchess" but then I finally realised you meant it in the cinematic context. What a right old palaver eh, what a palaver I tell ya! Now then, bout this grub of yours here...I'm about double your size and I don't know if I could manage a whole gai yang followed by the squid, so your appetite continues to amaze. Never tried squid eggs, how would they compare to...you know...actual squid? Less rubbery? That Gai Yang looked absolutely proper, gotta admit. I do it every month but don't have a barbie so use the oven. Then I take the cooking juices from the chicken and use it to cook a fried rice and use the marinade that comes off the chicken as it cooks to be the seasoning sauce for the fried rice. So the eggs cook in the garlic-y chicken fat, then the rice gets tossed in it with cooked, congealed gai yang sauce to coat it. Then serve that with the actual chicken. Absolutely banging and 3 days worth of food. Anyhoo, I will def check out that gai yang place here and if I can stuff any more in I will also check the squid gaff, but I don't fancy their chances lol

In Thai, meangda (แมงดา) can mean two things, horseshoe crab (meangdatalay, talay, as you know means sea) and giant water bug (meangdana, na means paddy). in this case, I think it's water bug...not 100% sure though. the male water bug can produce herbal or minty scent, don't know if it for mate calling or not, but in Thai culinary, the bugs are generally used in chili paste. never heard it can be used in namjimgai though, fascinating.

Mang da na's essence/extract in a dipping sauce? I have never had that, but I like it best in chili & pla paste. The essence can increase one's appetite, that's for sure; it has the same property as sprinkle chopped "wild parsley", wink wink on one's soup or mix in a batch of brownie, lol.

@@theroamingcook ok. I have another guess, what if the secret ingredient is Chinese apricot(梅,บ๊วย in Thai)? It’s sometimes used Chinese sweet and sour sauce. The plum sauce is called sumeijing or meijiang (蘇梅醬, 梅醬), in thai is บ๊วยเจี่ย (buai jia, it’s techew pronunciation).

@@theroamingcook Sometime they use artificial flavours for water bugs because water bug is rear ingredients they use male water bugs for scent in "namprik" paste sauce but female bugs for snack like fried insect becaus female bug doesn't have the strong scent for the dish.

@@TheWhisera Male mang da na has strong essence or pheromones, Thai people , mostly rice farmers or Chow Na, extract those and use as delicacy. Not that rare, they are plenty in the green rice paddies. But yes, there are imitation extract of it, just like imitation vanilla extract among other things. When the female ones are captured, her eggs are eaten after steamed. Uniquely delicious. I used to capture them when I was a child. It was a fun and delicious time.
Mangda is actually a type of bug/cockroach; not one of my favorites :-(

@@theroamingcook just wanted you to know that I really enjoy your videos and didn't mean to come across as correcting you, I just wanted to warn you .. ha ha ha.. I was born/raised in Thailand (17 years; from 1968-1985) and love everything Thai except for a few choice ingredients, especially mangda and most other bugs. Thank you for sharing Thailand with the world, it's a very special place to me! ;-)
