You brought back memories of my grandma make beef and noodles from the 1950s… After watching, I couldn’t resist trying, and now we’re having my late grandma’s special dinner tonight. My first few noodles were cut way too big and cooked up like dumplings, but after rolling the dough very very thin and cutting narrower, they’re just perfect. Cooking the noodles in a rich beef broth gave them an awesome flavor! Looking forward to making chicken and noodles next. Thank you so much.

I loved when grandma made noodles. Our nighttime snack before bed was noodles in near scalded hot milk, butter & salt & pepper. Pepper & hot milk helps you sleep better.

I love making egg noodles! Gonna try the roll sides to the middle cutting trick! But I like to use extra egg yolk instead of the water. Small batch 1c AP flour, 1 egg, pinch or so salt. Mix in well if dry add an egg uolk or 1 tbs water. The extra egg yolk makes richer and pretty yellow. Of course I have my own chicken eggs so my yolks are decadent, lol!

Perfect!!🥰🥰when me and my husband were 1st married back in 1987, we learned how to make this pasta, and we loved making it together!!! And we did it exactly how you make it, except the best part was unrolling them by hand🥰🥰🥰🥰 and we rolled it out and floured it, and then rolled it to be cut. Perfect chicken and noodles every time🥰🥰😋😋😋

I roll the dough out and found a small noodle cutter. It looks like a pizza cutter but has like 3 or 4 smaller roller/blades and so I use it like the pizza cutter and roll it in one direction over the dough.

I make little balls with my dough and roll it out a flour it and stack them up. Then take a knife and slice they fall apart easy.

I dry mine and then bag them and put in the freezer. Drying noodles let's them absorb the flavor like chicken or beef broth when cooking.

I would freeze them in a single layer on sheet pan lined with parchment and once frozen, put into baggies.

dear lady, if u think this is easier than buying a pkg at the store, bless your heart..im old, arthritic and not enuf grease in my elbows..i made these when i was a kid but used a cookie sheet instead of a plate. rule of thumb was 1 egg per cup of flour for dumplings or schnitzel..for chicken paprikas.

Yes, I think I go over that in the written post. I would lay them out on a tray lined with parchment and freeze them in a single layer, then when they are frozen you can put them into freezer baggies.

From what I understand the dough doesnt need any water until the dough is together and its too dry. Adding ¼ cup water forced you to use too much flour, more than ½ cup of additional flour. Ive never seen this recipe. The ratio seems a off. Also, since you didnt let it rest, the dough is springing back. Dough that springs back is an inducation of the gluten not relaxing after forming in the dough.
