G'day from Australia , you sir are a dead set legend . Since I started watching your tutorials I have made my own game cooler and set up a small butchery corner in my garage . An old timer farmer friend of mine gifted me with some antique butchers kit , knives , block , hooks , gambrels and my fav piece a very old Bodmann 20 inch bone saw . Being a Bow hunter/gatherer I have taken and processed my own wild pig , deer and rabbits with confidence all thanks to you my friend and I am now deep into your cooking videos . Hello from America. So, after watching and learning from you, and cooking for someone who loves her stock, I saved the silver skin, trimmings, bits of whatever from three fat whitetail deer (plus one beef bone) browned each bit and gave it all nine hours in the slow cooker bathed in red wine and herbs. I ended up with for cups of JELLY. Astounding. Stuff we used to toss out. Thank you!

Excellent recipe Scott..I’m cutting up a Deer rear leg quarter now devoting strictly to steaks 🥩 ..however I’m changing lanes over to your stew recipe now .. Many thanks this is the best .. Glad I found you . You are the best. I’m missing 16 teeth 🦷, but my venison will be tender . My great grandfather was Robin of Locksley.. They call me Sir Robin .. Nothing better than opening the freezer door and seeing all that venison.. mmmmm . Continued good fortune to you Matey !!

i made this exact recipe today for myself and my old dad whos 76. only differences were beef instead of venison (already had the beef so ill try venison next time) and hendersons relish instead of lea and perrins (we're from sheffield :D) and it was, in my dads words "the best stew ive ever had in my life" much love thanks a lot scott! i think ive put on a stone in the last half hour xD

I've been trying to free up freezer space for more deer these last few weeks as its currently rifle season in Virginia. I almost got burned out on the lazy ways I had been cooking it. I always love these wild game videos. You're a meat wizard, my man!

AWESOME!!!....my mom used to say that people first eat with their eyes..then their nose...so...if it looks good...it smells good...it TASTES good as well...Scott...i couldn't "smell"...but i have a every vivid imagination...it looks stunning...filled with all the goodness of the earth....man i would Totally eat your cooking...hands down.

I've got 2 k's of fresh venison cubes that are going into this recipe and can't wait to enjoy. I made 3 kg venison sausage the other day that came out stupendous. Even the kids love it. Keep up the great work!

Done one of these with a shoulder of roe which I shot recently, oh my god was it good!! Even had enough to freeze, its surprising how far a shoulder will go but wont last too much longer as going to eat the rest tomorrow for our tea! Thanks Scott!!!!

Scott. This was phenomenal! I found you when I searched for "butchering your own deer." (never done it before) Loved what I learned so I subscribed. Fantastic Scott. I really loved your videos and have shared them with lots of people. Just one tiny thing... When you tasted this you put the spoon back into the dish from your mouth. Apart from this being a real yukky thing to do it will effect the thickness of your stew. The enzymes in saliva will break down the starches. Try eating some custard, don't eat it all but leave some in the bowl for later. When you leave it for a few hours it will become runny..

Cooked this tonight used Belly Pork (soaked in salt water for an hour), instead of Smoked Bacon, added a few Juniper Berries, t'was awesome, have a sub!

from down here on the gulf coast of la. ,that's a hit. do a lot of deer hunting down here and we love eating our venison, we actually have to hunt them in the marsh, which is a little tricky retrieving them. its a different kind of hunting. we have to work hard for our deer. love your dish. i know its great.

I made this this stew today and it turned out great! I couldn't find find Coleman's mustard, I used McCormick's instead. I substituted a beef roast for venison and added couple red potatoes. Thanks.

Got some Roe chunks - that's what I'll be doing! The wine probably won't make it to the pan but a bit of balsamic will do the job! I'll probably do some dumplings - just 'cos I'm greedy! Great video - thanks!

Scott, this is a long comment but watching this and the fact that I copied your Oxtail stew recipe to a tee which I started last night and ate tonight and it was grand, I wanted to share something I stumbled across last year last week. I cut a venison loin into !/2 steaks and fried them. We, in this part of America might tend to over cook venison. I fried them with flour and colemans coating the same way I was taught by my French great granddaddy. Then I made a gravy out of flour and cold water mix. I never had luck with a rue. So. anyway , I put the loin steaks back In the gravy to finish. I got a few out for supper and turned the burner down to warm. Just in case I wanted some more later. I took them to my computer to eat and watch another or your videos. Well, fact is, you put me to sleep and I was full. The next morning I found the skillet had been on all night and the gravy had turned into hard like peanut brittle. The remaining loin was hard and dehydrated. I was fixing to dump it in the garbage when something said break the brittle off of it and try it. Sure enough, it was the best jerky I have ever made. All accidental and certainly a dumb thing to do. Probably why I am posting this is because I had a highschool classmate get burned up in a house fire this week. He will be buried Friday.
