I think perhaps for making the palm sugar syrup darker, it may just need to be boiled longer, as I know when I am making a simple syrup with white sugar/water, it takes on a darker color the longer it cooks. The sugar caramelizes and more water evaporates as steam as it is cooked.

Here are a couple of simple mocktails from here in the States. *Sour Coke* Mix 2 parts Coke-a-Cola with 1 part lemon sour (the "sour" part of a whiskey sour). Serve over ice. Turns a sweet carbonated soda in a deliciously tart, refreshing drink, and you can get it at any bar that has a soda gun. It's my favorite go-to at wedding receptions, letting me be sociable while keeping sober. I'd put it on par with an Arnold Palmer. *Basil Lemonade* For every 2 liters/quarts of lemonade you're making, cut 12 large fresh Italian basil leaves into ribbons, aka chiffonade. For those who don't know how to do this, you stack 3-4 leaves on top of each other, roll them up like a cigar, and then slice it. Muddle the basil ribbons into the sugar you'll be using for the lemonade and let sit for 10 minutes. Mix up your lemonade with the sugar and basil. Serve over ice. Not recommended for people with braces. The basil and lemon harmonize together in the most lovely way, amping up the complexity of this sweet-tart classic. The herby notes from the basil aren't overwhelming, so this can be enjoyed by children, though less adventurous tykes might need to see their peers liking it first.

I also like commercial takeaway lemon tea from boba shops and Starbucks, and Mildura Sunrise Orange and Passionfruit Drink (i.e. a drink that is fruit flavoured but is not pure fruit juice, but has added sugar, water and food acids). Of late, I have been putting dried fruit into the tea while brewing it, as bought a pile of dried fruit to finally try my idea of a boiled fruitcake with no dried grapes (i.e. sultanas or raisins), but I had a pile of leftover fruit, so based on a type of tea I encountered in China, I am putting the dried fruit in when brewing my tea.

Malaysia does not have food and drink, even the original culture of Malaysia itself, everything comes from the cultural influence of immigrants from China, India, even influence from Indonesia because based on history, Malaysia is under the authority of the Kingdom of Indonesia.

I concur about cantaloupe -- keep it away from me. But a long time ago, around the time one was built across the street from the building where I worked, Walgreen's used to sell "cantaloupe ice cream" in little pint containers. When I would make a Walgreen's pit stop before arriving at work on Saturdays, I would eyeball all the different ice cream flavors they had on offer ... and nearly ALWAYS come out of the store with a pint of CANTALOUPE and a smile. The intended cantaloupe flavor was very demure, and it tasted sort of PEACHY. Sometimes when I'm in that store, I stand a bit sadly in front of the current ice cream selections, sorely miss the cantaloupe days, and walk away without buying any.

Look for the cantaloupe variety that has ridges kinda like a pumpkin. They are sweeter and softer and way juicier. Fantastic with salt and pepper or something like Tajin. They are also larger than the perfectly round ones. I kept buying the little round ones and hating them. I didn't realise that the great cantaloupes I remembered from my childhood were different. The good ones are sometimes labeled as muskmelons. Trust me, they are amazing. :)
