From Alabama, I love all of the Southern BBQ no matter where its from. Its all different but all made with so much love and care, and its all so good! We have Dreamland BBQ, but I love the way Memphis, the Carolinas, and Texas do it as well. Just, yum. Good people and good times.

We have a truck landing in our small "city". Its really a town. There is a BBQ truck at the landing every Friday and Saturday. I really like their pork BBQ. Truck food use to be bad, but they are serving great food now. I prefer pork BBQ.

Native North Carolina girl here! Vinegar-based in the east & tomato-based in the west. Always pig. Normally chopped whole hog. An outdoor event with the smoker & all the sides is called a Pig Pickin' because everyone serves themselves, usually by hand, "pickin'" parts of the hog. My favorite part? Sliced tenderloin, baby, with extra vinegar sauce!!! My favorite brand is George's.

Barbecue originated in the Caribbean where natives would smoke their meat under banana leaves. The French later used more advanced smokers called “buccans” and the pit masters were called “buccaniere” which was later anglicized to “buccaneer” a name given pirates since that was the way they prepared their food.

Beef BBQ takes a long time, Millie. There are ways to cheat on that. But pork & turkey take about a third the time. Sausage is about a tenth the time. So if you, James, or Vicki decide to try to smoke beef, we need to have a talk. It takes commitment. Pork takes commitment in 'spritzing or mopping' often. Still much easier though. Whole hog is difficult & time consuming also. But you would need a huge pit or hole in the ground for that. I might start with something a little easier like Chili. But people are just as passionate about.

Pulled pork with a mustard-based bbq sauce on a buttered bun is the Belle of the Ball, baby! That, with some spicy baked beans, and some mac & cheese, and some country-style green beans on the side will feed your soul! I'm from Kentucky here, we like a slice of cornbread and a cup of burgoo with ours, but different strokes for different folks, ya'know?

I don't hear any place that uses mesquite. Some of the best was done in south Texas by local farmers. Used big pits made out of steal. Have had mostly brisket and had lamb once. Sadly is not done any more there.

The wood used is usually what's nearby & what complements the meat. Beef is more robust & can handle mesquite. Pork is a "lighter" meat so some wood smokes overpower the pork.

MILLIEVISION! Sweatmans BBQ in Holly Hill SC... THE BEST whole hog Carolina Mustard Sauce BBQ and Hash in America hands down. Anthony Bourdain did TWO shows that featured Sweatmans. They raise and butcher their own hogs on property. The restaurant is a 1800s Farm House surrounded by Huge Pecan Trees. Rick Charleston SC

Franklin's is amazing.... just a bit of an event waiting in line. Their brisket is the absolute best and the sides are top notch. When in Austin you can also schedule a pick up order (have to do it way in advance and there is minimum weight limit of meat per order, so quite expensive) but you get to go right in and pick it up with no wait. For those in the US, I believe you can order whole briskets on Goldbelly. Totally worth it! Terry Blacks is right up there too with the best BBQ in Austin! Don't forget about LA Barbeque!

I live in Tennessee and could eat pork BBQ daily. The sides i get are usually potato salad and beans with it. I sometimes get coleslaw if it has mayo since i can't handle vinegar slaw

Shorty's BBQ here in Miami....favorite is a PULLED PORK sandwich, 1lb of crinkle cut french fries, corn on the cob, cole slaw, and BBQ baked beans, and to drink 100% Southern Sweet Tea....followed by a couple scoops of old fashioned banana pudding ( made with vanilla wafers) and .......damn that is good eatin'....I'm nearly 65 and been eatin' there all my days !!!

Get. Yourselves. A. Smoker. Be the people you wish were in Jersey! :) I have a smoker. Everyone I know has (at least) one. It isn't difficult to learn to use and once you do, you'll be hooked. Besides, that's more material for your channel. :) A small smoker like I'm talking about are vertical grills. They're not like the ones you see in these videos, but they do get the job done.

City BBQ is sorta hit or miss for me - their beef selection is good - but Smithfield's BBQ is pretty consistent. Their fried chicken & hush puppies are daBomb!!!

Minnesota does have slow cooked smoked fish and meats you just have to ask the right people. And I’ve be been eating wild meat cooked and smoked from the age of 2 years old. I love old fashion cooking . I start at around 3 or 4am and get the wood coals going then roughly around two hours later the flames are not there and the coals are heated perfectly. Then it’s just the waiting game once the meats on the cast-iron grill. A love hickory but oak is the most common tree here in Minnesota next to pine and I tried cooking meat with pine wood and nope, not good. But that’s called learning

I'm a pitmaster trying to work out a move to the UK currently. The biggest issue I'm running into is meat. The UK doesn't cut it the same and it's not the same quality. While we can make fine BBQ with what you have over there we can't make great BBQ with it.

"Hot and fast" is a relative term. Ed Mitchell's "hot and fast" for whole hog starts at 500F (260C) but still finishes with smoking the pig overnight at around 250F/120C. "Hot and fast" ribs at the best joints in central Alabama (which means the best in the world, sorry Memphis!) still take about 2 1/2 hours, compared to Chris Lilly's "low and slow" at Big Bob Gibson's.

I was in Austin a couple years ago and wanted to try Terry Black's and Franklin's but I'm not that patient that I'll wait hours in line. Franklin's they line up with lawn chairs early in morning like 4 or 5 hours before it opens.

Actually, Texas BBQ is mostly beef, where as other places are mostly pork. Also, some areas depend on sauces, while others use rubs. Very rarely do you NEED sauce on Texas BBQ, although that's personal preference.

So when Millie said "Texas BBQ," she wasn't wrong like you implied. It DOES taste different depending on the wood used, rub or sauce, meat used, etc..I'm done now, have a good day....
