Phil you're right about people gravitating towards MTB after other bike sports. I've been a moto guy my whole life, I went to Snowshoe last year to watch the races and ride the next day with my brother who was working there at the time. I had so much fun that day, didn't crash, caught a little air, epic. After just one time I would gladly sell my dirt bikes to get into MTBing if I had a closer trails. Unfortunately I'm in Central TN now and all the spots are several hours east. That's really the only thing stopping me from going all in.

I think a really cool thing you could do, just to get out of your comfort zone, do one of those big endurance gravel races. I think it would be very interesting to see how you fare!

While that could be interesting, i don't think I'd find much enjoyment in that. For what it's worth, I've done a few cyclocross races in the past. Those were fun ish, but man it's not my cup of tea. I have tried to enjoy the endurance and cardio aspect of riding for years but I think it's safe to say i just don't like it nearly as much as others do.
