That always mystifies me. The restaurants were failing BEFORE Gordon ever heard of them. So you can't have him show up and then claim he ruined anything. And even if he did, he ruined them for ONE NIGHT. How do you explain all the other days of failure when he wasn't there? If they would fix things by themselves, Gordon wouldn't be there.

I think Gordon is focusing on the fact that he just let's them be inattentive. If he's not enforcing a higher standard from the start, then the cooks have no standard to follow (and it's hard to be motivated to do better with bad management). But I definitely do agree; the cooks really should've known and prevented the issue.

He’s the one in charge. The same owner is forcing his chefs to put pork bones in a vegetarian sauce and buying produce separately from them. The owner is ultimately responsible for enforcing standards whether that’s cleanliness, food quality or the staffs appearance. If he has let his, or those of his business, lapse or doesn’t appear to care anymore the staff won’t either.

It wasn’t a veggie sauce, it was legit just a normal tomato sauce, adding bones to flavor sauces is common. It wasn’t made for vegetarians, the only hit they can take is by not having a disclaimer on the menu about that fact. Unfortunately not much else is given about the situation, I would hope the lady was clear about being a vegetarian, cause if she wasn’t it’s not the restaurants fault at all. Though if you had a food restriction, I would assume you’d be more open about it and aware that restaurants may be adding more ingredients than what they list.
