🎥 In this video I show you how to bake eggplant slices until they are perfectly tender so that they are ready for your favorite toppings. We then top them with marinara sauce, mozzarella and your favorite pizza ingredients for a delicious, healthy treat.
Ingredients:
- 1 large eggplant (about 400 grams or 14 ounces)
- 3 eggs
- salt (to taste)
- Breadcrumbs (2 cups, about 240 grams or 8.5 ounces)
- Olive oil
- 2 mushrooms (medium size)
- Ghee butter
- Mozzarella for pizza (200 grams or 7 ounces)
- 4 cherry tomatoes
- Black olives (80 grams or 2.8 ounces)
- Basil leaves (for decoration)
