In high school I used to heat up a frozen breakfast burrito ( scrambled eggs with spices, cheddar cheese and bacon, no sausage bc I've never liked sausage) in the microwave and it was decent enough for a then 14 year old me. However they eventually stopped selling the breakfast burrito with bacon, only the sausage one was available, so my mom started making me a homemade one with hash browns on the side. It was probably the most delicious breakfast I've ever had and now over 20 years later I don't know how my mom did it, our mornings were always rushed, my mom had to get all of us kids ready for school while she herself had to be at work super early yet she still took the time to make us all a good breakfast instead of just cereals or pop tarts. But now it's been at least 2 decades since I had a breakfast burrito, I randomly stumbled on this video and plan on making this for my family now! Will save some for my mom as well, lol. Thanks for getting me to crave breakfast at 6pm! :)

Mr Rollins, I just wanted to say thank you for this recipe. I watched this video last night, and then fixed everything while rewatching this video again this morning. My 83 year old grandmother (who usually eats like a bird) actually LOVED this recipe so much (I did use mild green Chile for her since she doesn’t like spicy stuff like me) she ate the whole burrito and then smiled and asked me if I was gonna fix it again this weekend!! I’d call that a family hit!! Thank you again for sharing another amazing recipe with us sir. Hope you and your family are richly blessed by the Lord.

❤️ how kent and shannon roll! I know they work hard, but they also have laughter and love when together. What a wonderful relationship. The cast of canines are also part of this fmily I have a feeling Mr. Rollins was a hard sell when she came up with the idea of marketing what he does naturally. And you know he is too humble to commercialize his gifts. She is a force of nature, Thank you, Shannon Rollins. You help me remember some of the patients and families this retired RN met in my 40 years. When I felt I needed to get back to the WHY of my career choice, I found a rural hospital to work at. The backbone of our great country are it's people. And you can not find any better culture than their Western ranchers and homesteading famers and their families.

I’ve been watching Cowboy Kent Rollins for a few years now, and I have to say, when it comes to Cowboy cooking, with some interspersed Mexican and Southern elements (which I was raised on), he is unbeatable in the world of KZbin cooks/chefs for sure (IMO of course). If this man opened a restaurant, I’d be the first in line on opening day! This cooking has soul to it…which, in this day and age where it seems like so many people lose sight (or never get it in the first place) of the joys of eating because they are obsessed with their physical appearance…is something to be grateful for. Thank you Mr. Rollins!

I love a good breakfast burrito. It was always something good to take to the rig for a snack or meal. I use to make up something very similar to these when my son was little, okay maybe not little but 10 or 11 years old. We would get some of his friends together (usually 3-5) to go fishing in the fall at one of the local lakes. We made these up the night before because we would be on the lake by daylight and made at least 2 a piece minimum. Always amazed me how much those boys could eat lol. Wrapped them in foil and would place on the grill above the fire we would have. They could take them and be watching their poles while they ate. It made for so fantastic memories for this old man. Burritos were much the same except I also had chopped ham in them. Never tried the hash browns deep fried just spread thin in a 12 inch skillet. Always love your videos sir. Looks delicious! I've heard you mention Siver City a few times. I was born in Silver about 70 years ago and one of my first memories was eating with my parents at the Silver Cafe. That was some of the best Mexican food I've ever eaten and some of your recipes are just as good as theirs. Love the references to Hatch green chile too! I have 5 hens I raised from two week old chicks and got my first hen fruit a week and a half ago. It’s been very rewarding! Frying them in the end in bacon grease is genius! I love making these, never thought of that tho! I like to make a lot and individually wrap them in foil and freeze them. Super easy breakfast. Just take them out and microwave them for a minute.

Obviously I’m a bit biased, because I’m Mexican…but I think burritos are the ultimate “grab n go” breakfast!! In my opinion, nothing can beat them-because they’re quick, easy, delicious, the variety of fillings are limited only by your own ingredients/imagination, they can be as cheap/expensive as you want them to be and best of all, you only need *one hand* to eat them (especially if you know to poke and fill a “salsa well” in the middle of it!) They’re basically the world’s most perfect food.😂❤

My grandma used to make me breakfast burritos about 20 years ago. I miss those burritos and I sure miss my grandma, she was my absolute favorite.
