Remember our Kam Heong Chicken Recipe? We noticed that many of you loved that recipe so we decided to show you how to cook another Chinese prawn or Chinese Shrimp recipe in Kam Heong style as well. We also noticed that some of you had difficulty getting curry leaves so we have replaced them with kaffir lime leaves instead. Hopefully you can find the leaves. We believe kam heong recipes originated from Malaysia and invented by Chinese. Kam heong dishes have a combination of Chinese, Malay and Indian flavours. Very very unique and so packed with flavours. Ingredients:
Serves 4 - 5 pax
Marinated prawns
-------------
600g of prawns
1 teaspoon of salt
A few dashes of white pepper
2 egg whites
3 tablespoons of cornflour
Other ingredients
--------------
2 chopped shallots
1 stalk of chopped lemongrass (use only the white part)
6 - 7g of chopped young ginger
5 chopped dried red chilli
4 cloves of chopped garlic
1 tablespoon of curry powder + 1/4 cup (65ml) of water
1 teaspoon of salt
2 egg yolks
5 kaffir lime leaves (sliced thinly)

Sorry Im kinda late im a new sub and my family is a prawn lover but lots of cooking tutorials I see for making prawns my parents always say it ok i guess...... But when I watched this video I tried this recipe and when I served them to my parents they said it was the best thing they ever tasted. So I decided to always use your recipe because you are a masterchef.

I was brought up to eat with my mouth closed. I’m scarred by this experiencing and can’t stand hearing people chomp on their food. I think it’s an etiquette thing... otherwise, recipe looks great!

Thanks for the fantastic recipes that look so delicious! I love the end segment where you taste the food as well. Great presentation, filming and editing work. May I ask what saucepan you use? And also, why do you not turn off the heat before removing the prawns? Is it because it'll cause a drop in the oil temperature, thus rendering the prawns oily?

Hi Jacqui. Thank you sooo much for your kind words. We really appreciate it. When deep frying, if you off the heat before you remove whatever you’re cooking, the oil will be trapped in the food and it won’t taste good. Our pan is from La Gourmet. Hope this helps.

Hi! Im salivating by looking at those prawns! Rehydrate the dried red chillies is just by soaking them in water for few mins? N if i want to have more gravy, i will just need to add abit more of the curry + water mix, right?

I noticed in your Chicken Kam heong method you have used the lemon grass stems instead of chopping them up like you did here. And you also have left out the chopped ginger in the chicken dish. Are both methods ok for Kam Heong dishes?

Hehe we normally remove the shell but the lazy ones (like Roland) will just bite through the shell and try to squeeze out the prawn meat in the mouth. It's pretty fun. Try it. Happy cooking :)

can you share the ingredients used to make curry powder? It's always a different blend of spices that vary from one country to another. using my curry powder which blends middle eastern spices will give a completely different taste to this dish so would appreciate your curry powder recipe.

So sorry. We did answer but the answer went missing. Arggh. Lemongrass can be substituted by lemon zest. Whereas kaffir lime leaves can be replaced by curry leaves. Hope this helps.
