I totally agree. That was extremely informative. I no know either what to shop for or make my own. And the information regarding a omitting Mold pleases me also. One thing however i don’t like salmon. Can I use fillings to make it vegan? For example mashed cooked sweet potato or finely grated carrot. Please let me know if anyone have any other ideas.

Glad you enjoyed the video! Braised shiitake mushrooms can be a great vegetarian option. Also takuwan (pickled daikon radish), shio kombu (salt seasoned kelp), or some miso and diced green onion is a great option as well. You can also look for some "nori no tsukudani" which is basically marinated seaweed. Hope that helps!

Thank you for this step by step. My family and I visited Japan in July for the first time and the food is the best! Love the Onigiri,the Okonomiyaki, and the Takoyaki, the best Ramen restaurants and sushi of course! I bought an Onigiri mold but I have to say would love to see if I can mold it by hand just for fun! Thanks again! :)

Really awesome video, thank you. I know it might sound millennial of me, but do you have any tips on making onigiri without the use of all the plastic? If I use a mold, it might not be as easy but it might be achievable without using the plastic wrap?

Glad you enjoyed the video! You can shape the onigiri with just your hands if you'd like, that's how it was done way back in the days. You just want to dampen both hands with water and make sure the rice isn't burning hot (or wear gloves). I'm pretty sure you can use the mold without plastic as well, just make sure it's wet before you put in the rice. Hope that helps!

@@TheSushiMan I think I rinsed rice one too many times, it took the shape but after a while they fell apart, will try again soon. The fillings and rice came out amazing taste-wise. Thanks!

I just form them with my hands, you get your hands nice and wet, and add a bit of salt and rub it in, and then just lay out the rice on your hand, then put your filling in the middle, close it up with both hands, and then press making a triangle shape with both hands while rotating the ball. This way you aren't destroying the enviroment with so much plastic wrap.

Usually you put salt in the rice pot in the beginning when your cooking rice so it’s all even or you add sugar.

Are you using canned tuna? What would you recommend to best match the flavor that they have in Japan? Seemed like the tuna in their onigiri was better than the typical can of tuna you can buy here.

Everything in Japan is better..😜 just joking, but not really haha. I do use regular canned tuna (Chicken of the Sea, Chink Light) but I'm sure there are other brands that might be more "premium".

Can you use sushi rice? The closest stores to me dont really have very many options for rice

Typically we don't use sushi rice for onigiri, but just to clarify, sushi rice is the vinegared version of steamed rice, not an actual breed of rice. So you can use any Japanese short or medium grain rice for onigiris (California grown is totally fine). Hope that helps!

It's best to cool it down a bit so you don't burn yourself. Just leave it out in room temp for about 10 minutes and it should be fine.

Using plastic wrap every time seems wasteful. Is there any way to minimize it? How would you store the onigiri?

You can use your hands without plastic wrap, just make sure to wet them before touching the rice. You can also store it in an airtight container and in the fridge but keep the rice from touching each other if you're storing more than one. Hope that helps!
