the trick with the backing soda is SOOO GOOD!! there must be some magic involved... i literally just made a five star tomato sauce out of cheap and super acidic canned tomatoes. this is sooo yummy and easy to make ♥ thank you so much for sharing :)

Great video, but not that I mind, I still think that frying the garlic in oil counts as having oil. I have cooked garlic in a pan with just water before, and it turns out fine. Still a great, simple recipe! :)

I made this the other day and it as just marvelous! I ran out of ketchup today while preparing lunch and happened to remember that there was a small amount of this sauce in the fridge. I added a small squeeze of fresh lemon to it, stirred it up and it was yummy. made a nice ketchup replacement. keep sharing and thank you as always.

Baking soda is your best bet to cut the acidity, and it works very well. However, make sure not to use too much or the sauce will acquire an unpleasant soapy taste :-D Thanks for your support

Yesenia Sosa Sure, it will keep for 1 week without problems; I've never kept it in the fridge for longer than that. However, if forced to guess I'd say that it can keep for up to 3 weeks. I hope this helps :)

Chua Xuan Yi If you want to use fresh tomatoes you can either keep the tomatoes skin and remove it after the cooking process by passing the sauce through a sieve, or make a tomato concasse first (have a look on google to see what it is if you don't know) and then use the fresh tomatoes for the sauce. The best tomato varieties are generally plum ones, but I obtained amazing results with almost any ripe tomatoes available. I hope this helps :) Thanks for watching!

In the beginning of the video you said that some Italians leave the garlic clove whole so they can remove it later. If I wanted to do the same would I remove it at the end just before I add the basil leaves? Thanks!

Thank you for your comments and for showing appreciation for our work. To answer your question: leave the garlic in until the sauce is completed and then remove. However, make sure not to press it with the spatula/spoon or it will disintegrate and you will not be able to remove it.

Val Caddy Hi, thanks for your comment. The fact that you can't stand garlic is definitely not unusual. In fact, many people don't like garlic at all in their food. The good news is that you can certainly substitute it with onions (or simply omit it) and I promise that the sauce will come out just as good. theinstigatorr Very easily actually! Basically you move it to a pan as soon as it is cooked, adjust salt if desired, tip in the cooked pasta and sauté to obtain the final dish. You might consider the idea of adding a couple of chopped black olives, a pinch of black pepper and a touch more basil, just to make the final dish a bit more vibrant. I hope this helps, thanks!

Aurora Rei Hi Aurora, thanks for your lovely comment! We live in the cold Scotland at the moment. In regard to your other question, passata is very thick and it has already been thoroughly cooked, which means that there is very little room for improvement as you can't cook it for a long time. Tinned tomatoes are cooked as well, but they have simply been pasteurized so they are basically still as juicy as when they were raw. Like the majority of Italian chefs, I'm not a fan of passata and I basically never use it. However, that is a personal choice and you can certainly make use of passata in your recipes if you feel it is appropriate. Thanks for watching and for your kind words, very much appreciated :)

sai viji That depends from the kind of tomato sauce you want to obtain. Personally the only thing I would remove are the skins, as they don't have a pleasant taste when cooked. The part with the seeds is the one that gives the acidity to the sauce, so once again it is up to you if you want to remove it or not. I hope this helps :) Thanks for watching

Emina Mutapčić Absolutely! If you peel them first the sauce will end up much better, as the skins tend to lend a slightly unpleasant final flavor to the final sauce. Thanks for watching!

I just made this sauce!! I did peel the tomatoes first and this is the most delicious thing I've ever made in my life haha And I used my homegrown tomatoes :) I alsoadded dried basil, oregano and sliced olives and it's so yummy! Thank You so much!

Emina Mutapčić You can't imagine how happy I am to hear that :) Thanks for keeping me posted! Tomato products don't keep well in the fridge I'm afraid, so I would eat it within a couple of days max. However, you could try to freeze a small batch of it and see if you enjoy the flavor after a week or so, and in that case it should easily keep for up to a month. That last and best solution, which obviously is also the most difficult, is to jar them using canning equipment, but that's really not the same thing. I hope this helps :)

Hi Vegan Corner from Canada. Just a couple of questions. I thought that leaving the seeds in tomato sauce makes the sauce bitter? I note you do not strain the seeds out. Also, can we see both of your faces. I struggle to try and see your faces reflection in the cookware but no luck so far! Again, thanks for all your great recipes, including this one....

+Flora Lynphea Well, rest assured that you are not the only one who likes flavour :) This is sauce is as good as it should be, and I know for sure that any Italian would love it. However, we all have different palates so it is really up to you to decide. If I were you, I'd give it a go ;)

Frying garlic in oil and calling it oil-free is like cooking bone broth, removing the bones and calling it vegan. ;) Still an awesome video and man, I miss your videos.

+Fräulein K. The reason is that chopped and whole tomatoes have a very different pulp/juice ratio. Whole tomatoes have more pulp and less juice, whilst chopped tomatoes have more juice and less pulp. More pulp means more pectin, which is a natural gelling agent contained in almost any plant. For this reason, whole tomatoes will produce a thicker, denser and more flavorsome sauce, in less time!
