As a Southern kid one of the budget meals we were served at school was Brunswick Stew. Leftover smoked pork butt with leftover bbq chicken, onion, shoepeg corn, tomato, bbq sauce. I've seen versions that added lima beans and potatoes, but that is not the way we had it in Georgia. Thanks for the shout out to Memphis BBQ Spaghetti.

Money saver hint: I have a vacuum sealer and used appropriately, it can save you a LOT of money. No spoiled food = money saved. No freezer burned food = money saved. I wrap portions in plastic wrap and then seal in bags. I can put more than one portion in larger bags. Then refrigerate or freeze. I put cheese in the fridge that lasts for months in a vacuum bag...taking out a portion. then resealing. I also do this with lunch meat. I wrap steaks, hamburger, pork chops in plastic wrap, freeze, then seal in a bag. Currently have bags with 4-6 pieces of meat each in my freezer. Take one piece out to defrost, then reseal the bag. When the bag is empty, but still big enough to use again, I wash it and store it for future use.

Cut it to cubes, make a basic pörkölt from it (meat, onions, paprika, salt and pepper) with a good amount of water (like you are making a stew) and the fun begins. If you add more water to it, you can make different types of soups (bean soup, gulyás, babgulyás, potato soup, etc), or if you want keep it as stew, you can put it on rice, pasta, french fries (or cut your potatoes in cubes and you are making Brassói, if you add peas, you did one of version of that), or for simplicity, eat with bread. Also, you can add some sauerkraut (wash it at least 4 times out the cabbage) and cook it with your pörkölt/stew, and you also receive a different meal. Or stuff some crepes with it, and fry it to make Hortobágyi palacsinta. Or do same casseroles dishes (different veggies + rice). It is really universal base to make your meat to pörkölt in Hungarian cuisine, as lot of different types of meal requires it.

Duck sauce and a slow oven makes a yummy roast too. A really big one you can do at 270 overnight in the oven or in your crockpot. Yours looks yummy and the use of the roast, some can be sliced and used as a roast, the remaining amount you want for pulled pork type meat can then be put in a crockpot. The best of both worlds. Make sure you make gravy with the drippings to go on your roast pork dinner with mashed potatoes of course.

I take the bone, leftover fat and any drippings from the bottom of the pan, put in the crockpot overnight on low. The next day let it cool off place the juice in a bowl and put in the refrigerator. The fat will come to the top, scrape it off and place it in a small pan. The juice should be like a jelly, I make pork noodles or pork stroganoff with the juice. Take the fat you saved cook it on the stove over low heat, it will pop all the water out and render the fat, place it in small containers when cooled and use as the fat for making biscuits. I use the meat for homemade rice a roni type meals, burrito's, pork and gravy over mashed potatoes, I try to save a cup or two to pour over baked potatoes, pork fried rice. Baking potatoes are on sale this week at Kroger, so it's baked potatoes for dinner with different toppings pulled out of the freezer this week. The potatoes are 2.99 for 8 pound bag, with all the little hand fulls of this and that in the freezer it should be a good budget meals. Thanks for the video, I need this right how.

This is great. Yes you should make more videos like this. I've been a cook in restaurants all my life and these things are something I would do. And some of the dishes are very versatile. I would switch out the black beans in the burrito for pinto beans cuz black beans aren't something l like. You can do many other things with some of these dishes to stretch them even further. I say this because I had 6 kids and learned how to do just that a long time ago. Peace 🕊️

So years back I bought an injection needle (it was like $4 ish dollars) for frying turkeys, but since then I have done that to all types of meat. About a year ago I blended a small can of jalapenos (La Costeña sliced has the peppers and carrots), melted butter, cinnamon, brown sugar, powdered ginger, and smoked paprika and injected a pork butt about the same size as the one you have there (the ginger and paprika were kind of expensive and you don't really need them). I rubbed the outside in the same mixture too. I slow cooked it for hours until it was almost done then I threw it on the grill over charcoal and blackjack oak wood chips. When it came off after about an hour I had a nice crust outside I pulled it apart after it settled and took it to work the next day for a co-workers retirement party for tacos. Not to toot my own horn but there was none left and I kept getting harassed by people asking if there was more from other departments so much I made a sign the said "No more meat left, don't ask" lol.

Thanks for that suggestion, I never would have thought to put apples on pizza but I put apple with pork all the time. If you have a rice cooker, a favourite quick, cheap and easy meal of ours is two "cups" of rice with the appropriate amount of water, then throw in whatever veggies you have, frozen or cleaning out the fridge... half a bag of frozen peas, carrots, green beans and corn is our standard... then when the rice cooker goes "poink", stir in whatever meat you've got, and if you add a can of cream of whatever soup, even better.

Very good demonstration, those all look fantastic. I'd say be on the lookout for pork belly on sale as well. Might need a couple of different preparations, but from one good slab you can make a variety of very different dishes; Carbonara, Babi Panggang or Char Siu, bake it or smoke it on the grill and put it in a frittata or in a split pea soup or have it with eggs for breakfast.

I just got one of these! Couldn’t believe how cheap it was. I wish I’d have seen this before cuz we got the McCormick pulled pork packet and that costs almost as much as the entire pork roast. It’s $3 then you add ketchup, apple cider vinegar and brown sugar. It’s so yummy though. It’s cooked in the crockpot.

Pork shoulder and pork loin are cheat codes for budget meals. It cost some up front but if you can swing a meat grinder you can make great ground meat with them too. Use in place of whatever you use ground beef or turkey in or even try your hand and some sausage.

Pork loin can be almost too lean and even a bit insipid, but with a little seasoning and maybe some leftover bacon fat… My late Dad went through periods of thriftiness back when 99-cent/lb. pork loin was very common (as in about half the time), so I sort of got sick of it. He knew how to use spices but usually didn’t make the effort. Slices of unadorned slightly overcooked roast pork loin get… tiring.

@@markiangooley agree seasoning makes a difference as does sauce and probably bigger difference is not over cooking it. People freak out about doneness in pork.

Found a spiral cut cooked ham at HEB for $10 and after eating it, put the remaining bone and meat/gristle into a pressure cooker for an hour and 15 minutes to create a rich broth which then was the base for a BIG pot of soup by adding frozen veggies and seasoning. Modern pressure cookers are amazing for saving money and using energy efficiently (heck, if you have one that doesn't require electricity, you can use them during power outages)

I am not as creative, but you can get a box of hamburger helper, and use pork, chicken, you do not have to use hamburger. A quick way to switch it up. Also can throw it in with ramen noodles (no seasoning pack). Make a box of stuffing and add the protein to that. Even instant mashed potatoes.

I love it when my local supermarket has pork "butt" or "shoulder" (same thing) on sale. It's a great opportunity to get a lot of protein for tacos, burritos, or added to rice or ramen. The main problem for me is I'm single so it's a lot of meat (which is the main reason I only buy it when on sale). On the other hand my two dogs love it when I cook something like pork shoulder since they get whatever I can't eat. I find that a lower temperature (I usually use 280 degrees) and a longer cooking time (usually 4 to 6 hours) produces a better result. The "low and slow" method produces a more tender result from a cut of meat that is otherwise quite tough. I also usually use a dutch oven to retain moisture and it works even if I use the stove rather than the oven. I normally add some aromatics like yellow onion, garlic, and peppers.

I roast a big piece of pork shoulder with nothing on it other than slits in the skin with a razor blade and a sprinkle of salt and rosemary, slow roast for about 5 hours until it falls apart and the crackling is crispy. That way, you get all the crackling, and everyone can add whatever sauces, seasoning and flavouring they want to themselves. A good way to make budget meals is to cook big Yorkshire puddings that match the size of the plate ,(very cheap and easy to make) then put a small amount of the pork in, some mash potatoes and carrots and peas, all very cheap and then buy a jar of gravy granules, and also use any if the juice and drippings from the meat, and some of the water from the veggies, and make a nice thick gravy from it. And it will fill bellies up. Believe me, I know. About 15 years ago both I and my wife ended up out of work at the same time, so we were basically living up shit street. For over a year aswell. It was horrible and sometimes we had about £3 (At the time around $5-$'6b,) to feed a family of two adults and two children. But we did it. There was a shop called Netto bear us ,(think Aldi, very good quality but cheaper) and we could get cheap veggies, meat, desserts etc from there, as long as we were creative with the ingredients we could afford to buy. One thing I wouldn't agree with you about is when you say it's better to have a small meal in your belly than nothing at all. It isn't, not when you have nothing, because you can quite happily miss out on a few meals if you ignore the stomach growling at you, but if you are ravenous and then you have a small amount to eat, it doesn't satisfy your hunger so it can make it worse. What you have to do is bulk that meal out with anything you can to make it go further, such as anything you cut off the vegetables, put it in a pan of water, add salt pepper, ketchup even, any flavourings you have in the cupboard, and thicken with a spoon of flour, then you have a soup everyone can have as a starter before the main meal. That's what we did. And also when I made the Yorkshire puddings, what was left of the ingredients for that (flour,n milk and eggs) I took a second bowl added the remaining flour egg and milk, then added sugar and margarine, then baked it and we had cake for after dinner. And I know it was basically the same ingredients we were already eating but it worked to feel full and satisfied. I used all sorts of tricks to make other cheap meals and other food to eat. I've used leftover mash potato or rice as the starch component in homemade cakes, pancakes, bread, tortillas and other things just to use up what we had and not to waste anything. When you are skint and have no money every item if food is precious. I'm lucky because after a year we both gained employment and since then we've been good. I'm by no means a rich man, but I've made sure that if anything like that occurs again, we will be ok. I've got money put away, sticks of long life food put away, and I made sure I've got lots of fruit trees growing in the garden, and a big collection of vegetable seeds if I need them. One tip I can recommend to anyone, if you have the smallest but if dirt in your yard, or plant pots, planters etc if even go buy a growbag from a garden centre, then every time you ever have onions, once you cut the root base off, plant it. You will get new onions. Also pop a few garlic cloves in and u will have bunches of garlic growing too. And sprinkle a few different seeds in aswell and you have a nice little herb garden going. And the biggest thing you need when you have no money are herbs, spices and seasoning, because if you have that, you have flavour. Then you can flavour any cheap crap you have to buy to make it taste nicer.

$1/lb. pork shoulder or pork picnic bone-in aren’t as common as they used to be, but they happen here occasionally. (Remember that time maybe 15 or more years ago when for a few months, ten-pound bags of chicken leg quarters were sometimes only a dollar or two?) Definitely worth taking advantage of! Nowadays i sous vide the pork just hot enough for just long enough… I can never remember the numbers but they’re easily looked up.

substitute some nice Italian tomatoes for the BBQ sauce in the spaghetti and you'll have something much tastier and much healthier; real Italian pasta usually involves pork!

TheWolfePit and whoever might have some advice for buying meat: Do you have any advice on what a good price is for buying large chunks of meat, chicken, turkey, etc from the store? That price of the Boston Butt seems pretty reasonable to me! 7lbs of meat for roughly $7 seems amazing! I'm used to my family paying nearly $10 for a single lb of ground beef, so this opened my eyes. I'm just unsure of what the price per pound should be since I'm desperately trying to save my money these days. I am all about making a large amount of meat work for meals stretching over the month, which is why I do bulk bean / lentil purchases every few months. How would I be smart about purchasing meat? I look forward to the day when I get my hands on a whole chicken (de-feathered for now of course), and I get to cook up whatever part I want and freezing the rest. If anyone else wants to chime in, I'd really appreciate it! P.S. If there is advice for this question in your video, just knowing I've actually only watched 33s. Realized I'll be late for work if I watch any more! Bad timing lol. Thanks for understanding

Meat tends to go on sale in cycles and seasons...like right now, turkeys are dead cheap for the holidays, and hams and beef roasts as well. You can cook and freeze the meat just as in this video. And ham you don't even have to cook first, just cut and freeze. The other thing to do is get the weekly flyer most stores put out and study it. Over time you will see what the prices are in your area and they sort of follow a cycle. Like ground beef here is usually almost $8 a lb. Yikes! But at least once a month, it will sale for $5. And then about every other month, it will be a deep discount for $3. And then very occasionally, like summer bbq holidays, it will be dirt cheap like 1.98. Fathers day, 4th of July, etc Stick up when you can to take advantage. This goes for all foods, not just meat.

Ps. Chicken... Most stores carry a 10 lb bag of leg quarters(the leg and thigh) dirt cheap. Like $1 a lb. We like breasts to eat as an entre by itself, but when it's in a casserole, soup, etc the dark meat is fine. I will buy a bag and put the whole thing in my crock pot till it's falling off the bone and then freeze in 1lb ziplocks stacked flat to save space. Then roast the bones and skin at 400 till they have a nice color...(add an onion quatered, a carrot or two and a few stalks of celery to roast alongside for real deep flavor) and then boil them to make awesome stock.

1/2 pound of that pork with some chicken bullion, water, beans, hominy, and a can of tomatoes makes for a good soup.

There's small, medium and large, when it all boils down. Small is still legit, on equal standing -- if you have nothing, small is great.

We never see $.99/lb for Boston Butt since before Covid, usually it's around $2.49-2.99/lb We actually get Pork Loin cheaper on sale at $1.99/lb, We might see Chicken Drumsticks and Thighs (bone-in) for $.99/lb though.

We had a pizza in Bimini Bahamas. Watched the lady, Edith, make the dough. She used flour, beer (lager) sugar and something white .. maybe more flour?? Anyways. Crust was unbelievably good. Maybe something to look into and uncover how to make beer pizza crust for the rest of us. Oh, that rhymes.

I'm the anti-scooter, just about every budget meal Larry makes is one that I would be satisfied with eating a single serving. Although not a meal in itself, the bone and all the "discarded" fat could go into a big pot of beans.
