Something I learned a while back, might have even been from you, in a video a long time ago… whenever I find a food challenging to pair with, consider bubbly! Prosecco, Cava or good old Champagne work surprisingly well sometimes when nothing else seems to be ideal. I enjoy your videos, they pair well with everything! 😉

Really fun video! Reminds me of a really old video of your’s, I think some Asian food with sriracha or such! Honestly I am a bit surprised at the folks who said one can’t pair with Brussels sprouts! As a vegetarian one has to get more creative and caramelization is what helps (even with baked). I do something which might be a bit of “cheating”, but a drizzle of balsamic vinegar with a generous sprinkle of Parmesan, especially shavings would make it even more pair-able. Those reduce the light bitterness and I’ve gone with even supplementary pairings with reds, but there’s other foods on the side too, but of course extra points to you for braving it solely with the Brussels sprouts, of course the pomegranate sauce helped some. When you mentioned that lemony thingie I realized you might go for crispy whites as you did!

Hi 🤗❤ loved the video. As a vegetarian, I've been pairing wines with Brussles Sprouts for decades. I also love your idea of pairing wine with the seasons. As an older gentleman that enjoys a fine cigar from time to time, I also like to pair my wines with cigars. The other day I tried an experiment. I had an Italian red wine with my dinner. After my dinner, I dropped a couple of ice cubes and poured 1/2 shot of cognac into my wine glass. OMG it was sooooooo AMAZING 😊❤

@Winefolly That's what I thought too. Cognac is made from brandy, and brandy is made from grapes, just like wine. So it just made sense. Sure, that's an over-simplified explanation, but I'm a simple guy, so it works for me.

Please do artichoke! Great video, as I like to also pair wines with tannin rich veggies like artichokes and asparagus. I think the reason why Brussels sprouts and artichokes are so difficult to pair with wines is the clashing tannins. So I’m not surprised that the orange wine, because if the tannins from the skins to make the wine orangie, clash with the sprout.

if you want a challenge with a pairing you can try to find a pairing with chocolate cookies or brownies. Also a hard pairing would be anything with mint in it. ( like bruscetta with beans, ricotta and mint )

Fino or Manzanilla Sherry is good pick with Asparagus - it actually makes a great aperitif served slightly chilled! For this one, you need an actual wine shop to find great quality. So... if you're in a desparate space, I would try Sauvignon Blanc, Grenache Blanc, or Vermentino (from Italy)

Try pairing with Nigerian jollof rice! It’s one of my specialties as I learned the recipe from a Nigerian. My personal suggestion is a Mosel Riesling with some RS or any more tropical expression due to the rich sauce and hot habanero peppers.

It’s not unpairable if most of us are more open minded towards non-classical approach to wine ~~ 😅 I had a funky, barnyard Lambrusco (yes it was weird af) that was so meaty I thought I’m drinking a med-rare steak with strawberry sauce for a sec… I have a hunch it’d go well with Brussels Sprouts tbh 🤔😋

I love this! I'm very skeptical of wine recommendations for sushi. Wine pairs poorly with soy sauce (or miso) in my experience, as it leaves a rotten aftertaste. I'm wondering if the recommendations often found online are based on sweet sauces and other ingredients like fruit and cheese often found in western sushi, or is there something I'm missing?

I also love that pairings can be really unexpected! I tried pairing Venice's signature dish, baccala mantecato, and no matter which white wine/prosecco I tried with, it always left a fishy aftertaste...I happened to have a 100% mourvedre from Bandol so I just tried it for fun, and magically it worked...! However, when I tried a Syrah/Grenache based wine from Provence that resembled the 100% mourvedre wine to some extent, it was even worse than all the other white wines...I still can't figure out why that Mourvedre worked, and also why the baccala, which did not taste fishy on its own, would suddenly take on such a fishy taste with wine. I'm wondering if it's the oil that is used to emulsify the salted cod.
