In Sierra Leone we dry or smoke fish over coals mostly as a means of preservation. Since we make stews alot the dry fish holds up in the stews. We also sometimes fry fish but then add it to stews. Grilling is also more conducive to the climate.

You should try to contact a Sierra Leonean KZbinr called Antoinette George. Her KZbin channel is good and she has a realistic perspective of Freetown and Sierra Leone. And she cooks really good Mendé style Sierra Leonean food.

That would be a great topic. I remember a few years back, I read a book called, "George Ross and the Maroons, a group of blacks who made the journey from Jamaica to Nova Scotia then to Sierra Leone. It was very interesting.

GoBlack regarding our fish recipes you haven't been there long enough to taste our food. We have steamed fish with vegetables, okra soup with fish, craincrain with fish. The grilled fish is just easy to make when serving in restaurants, like fast food. Traditional Sierra Leonean food can take 1.5 to 2hrs/3hrs to cook sometimes hence the reason for grilled fish in restaurants and bars.
